Ingredients

FOR THE TUNA SANDWICH LUNCHBOX

  • 1 baguette 5 inches long / 12.5 cm
  • 1 can Spanish tuna in olive oil
  • 1/4 cup mayonnaise 58 grams
  • 1 tbsp finely chopped chives 3 grams
  • 2 slices tomato
  • handful arugula
  • handful mixed berries
  • handful pringles
  • sea salt & black pepper

FOR THE VEGGIE WRAP LUNCHBOX

  • 1 extra-large flour tortilla
  • 1/4 cup red bell pepper roughly chopped 40 grams
  • 1/4 cup green bell pepper roughly chopped 40 grams
  • 1/4 cup yellow bell pepper roughly chopped 40 grams
  • 2 tbsp finely chopped red onion 6.5 grams
  • 1/4 cup greek yogurt 65 grams
  • 1/4 tsp garlic powder .80 grams
  • 1/4 tsp dried dill .30 grams
  • handful crackers
  • handful raw almonds
  • sea salt & black pepper

FOR THE FRESH MOZZARELLA & TOMATO SANDWICH LUNCHBOX

  • 1 baguette 5 inches long / 12.5 cm
  • 1/2 ball fresh mozzarella thinly sliced
  • 1/2 tomato thinly sliced
  • handful arugula
  • handful green grapes
  • handful pringles
  • sea salt & black pepper

SMOKED SALMON ROLL UP LUNCHBOX

  • 1 extra-large flour tortilla
  • 2 tbsp cream cheese 28 grams
  • 3 slices smoked salmon
  • 1 tbsp finely chopped chives 3 grams
  • dash black pepper
  • handful crackers
  • handful cherry tomatoes

FOR THE VEGGIE SANDWICH LUNCHBOX

  • 1 baguette 5 inches long / 12.5 cm
  • 2 tbsp plain hummus 30 grams
  • 1 tbsp dijon mustard 15 grams
  • 1 tomato thinly sliced
  • 1/2 red onion thinly sliced
  • handful arugula
  • handful green grapes
  • handful raw almonds
  • sea salt & black pepper

Instructions

TO MAKE THE TUNA SANDWICH LUNCHBOX

  1. Drain 1 can of tuna in olive oil into a sieve with a bowl underneath, mix the tuna, add the tuna into a bowl, along with a 1/4 cup mayonnaise, 1 tbsp finely chopped chives and season with sea salt & black pepper, mix together until well combined, add the tuna salad into a baguette, make sure it´s evenly spread out, add 2 slices fresh tomato over the tuna salad and a handful of arugula, add to a lunchbox, along with a handful of pringles and a handful of mixed berries

TO MAKE THE VEGGIE WRAP LUNCHBOX

  1. Add a 1/4 cup of each, chopped red, green and yellow bell peppers into a large bowl, 2 tbsp of finely chopped red onion, 1/4 cup of greek yogurt, 1/4 tsp garlic powder, 1/4 tsp dried dill and season with sea salt & black pepper, mix together until well combined, add the mixture into an extra-large flour tortilla, compact the mixture in the middle of the tortilla, tightly roll it up like you would a burrito, add to a lunchbox, along with a handful of crackers and a handful of raw almonds

TO MAKE THE FRESH MOZZARELLA & TOMATO SANDWICH LUNCHBOX

  1. Add 1/2 tomato thinly sliced into a baguette, along with 1/2 ball fresh mozzarella thinly sliced, season with sea salt & black pepper, top off with a handful of arugula, add to a lunchbox, along with a handful of pringles and a handful of green grapes

TO MAKE THE SMOKED SALMON ROLL UP LUNCHBOX

  1. Spread 2 tbsp of cream cheese on an extra-large flour tortilla, make sure the cream cheese is coating the entire surface, add 3 slices of smoked salmon over the cream cheese (in a single layer), sprinkle in 1 tbsp finely chopped chives and a dash of freshly cracked black pepper, tightly roll it up, add to a lunchbox, along with a handful of cherry tomatoes and a handful of crackers

TO MAKE THE VEGGIE SANDWICH LUNCHBOX

  1. Spread 2 tbsp of plain hummus on one side of a baguette, 1 tbsp of dijon mustard on the other, add in 1 thinly sliced tomato, season with sea salt & black pepper, 1/2 onion thinly sliced and top off with a handful of arugula, add to a lunchbox, along with a handful of green grapes and a handful of raw almonds
