Classic Patatas Bravas with Aioli

Ingredients

  • 2 Medium Russet Potatoes
  • 1/4 Cup Extra Virgin Olive Oil
  • 1 Clove Garlic Minced
  • 1 Teaspoon Smoked Paprika
  • Fresh Parsley
  • Sea Salt
  • Homemade Aioli

Instructions

  1. Pre-Heat oven (bake and broil) to 210C - 410F
  2. Cut potatoes into even sized cubes
  3. Drizzle olive oil on a baking sheet
  4. Add potatoes to baking sheet and spread evenly
  5. Drizzle more olive oil over potatoes
  6. Cook in oven for about 35-40 minutes
  7. FOR THE SAUCE
  8. Using a small fyring pan on medium heat, add 2 Tbsp of olive oil
  9. Add minced garlic
  10. add Tsp smoked paprika
  11. mix all together and cook for about 1 minute, set aside
  12. After 40 minutes take the potatoes out of the oven
  13. Add the potatoes to a bowl and add the sauce
  14. Add a generous pinch of salt and mix together to coat every potato
  15. Transfer potatoes with sauce to a plate
  16. Top off with some homemade Aioli and Garnish with Parsley
  17. Enjoy!
