Cut the potatoes into 1/4 inch thick oval slices

Cut each oval slice into french fry cut slices, about 4 fries per oval slice

Grab a medium sized frying pan and heat the burner to a medium heat

Add a 1/2 cup of extra virgin olive oil to the pan

Once the oil gets hot, season with some sea salt and add the potatoes, stirring occasionally

After cooking for about 5-7 minutes, season the potatoes with some sea salt and mix all together

Once your potatoes are cooked all the way through, transfer to a plate with a paper towel

Add the potatoes to a shallow bowl

Using the same pan with the same oil, heat the the pan with a medium heat

Once the oil gets hot fry the eggs, making sure not to over cook the yolk

Transfer the eggs on top of the potatoes in the shallow bowl

Dust with some smoked paprika

Garnish with some fresh parsley
