Warm Goat Cheese Salad

Ingredients

  • 1 Head Romaine Lettuce
  • 1 Small Red Onion
  • 1 Tomato
  • 2 Pitted Dates
  • 1 Tbsp Toasted Sunflower Seeds
  • 1 Tbsp Toasted Pumpkin Seeds
  • 1 Thick Piece of Goat Cheese
  • 3 Tbsp Extra Virgin Spanish Olive Oil
  • 1 Egg
  • Breadcrumbs
  • Glazed Balsamic Vinegar
  • Sea Salt
  • Freshly Cracked Black Pepper

Instructions

  1. Cut a head of romaine lettuce into small pieces, wash and pat dry and transfer to a shallow bowl
  2. Cut a small red onion into thin slices, cut a tomato into thin half-circle slices and finely mince 2 pitted dates
  3. Add the onions on top of the lettuce as well as the tomatoes, designing the tomatoes in a circular design
  4. Next add 1 tablespoon of toasted sunflower seeds and 1 tablespoon of toasted pumpking seeds into the bowl
  5. Beat 1 egg in a bowl and add about 1/4 cup of bread crumbs in another, dip a thick circular piece of goat cheese in the egg and then coat it well with the breadcrumbs
  6. Heat a small non-stick frying pan with a medium heat and add a generous tablespoon of extra virgin Spanish olive oil to the pan
  7. Once the oil get´s hot, add the breaded goat cheese, turn after about 20-25 seconds and cook the other side for another 20-25 seconds, then transfer on top of the salad
  8. Now add the minced dates on top of the salad, drizzle some balsamic glaze on top of the salad, drizzle some extra virgin Spanish olive oil, season with sea salt and freshly cracked black pepper
  9. Enjoy!
