Ingredients

MONTADITOS DE ENSALADILLA DE ATUN (OPEN FACED SANDWICHES WITH TUNA SALAD)

  • 2 cans tuna in olive oil 5 oz / 140 grams each
  • 1/2 cup mayonnaise 125 grams
  • 1 small onion (finely chopped)
  • 1 clove garlic (finely minced)
  • 2 tbsp chopped fresh parsley 8 grams
  • 1/2 baguette
  • 8 anchovies (canned)
  • 8 pimento stuffed green olives
  • sea salt & black pepper

SANDWICHES DE SALMON AHUMADO CON QUESO CREMOSO (SMOKED SALMON SANDWICHES WITH CREAM CHEESE)

  • 4 slices white sandwich bread
  • 1/4 cup cream cheese 60 grams
  • 4 slices smoked salmon
  • handful fresh chives

BOCADOS DE QUESO BRIE CON MERMELADA DE FRESA (BRIE CHEESE AND STRAWBERRY JAM BITES)

  • 8 crackers
  • 4 oz brie cheese 120 grams
  • 1/4 cup strawberry jam 80 grams
  • 8 walnuts

MONTADITOS DE MANCHEGO CON PIMIENTOS DEL PIQUILLO (OPEN FACED SANDWICHES WITH MANCHEGO & ROASTED PEPPERS)

  • 1/2 lbs Manchego cheese 225 grams
  • 4 jarred roasted red bell peppers
  • 1/2 baguette
  • 2 tbsp extra virgin olive oil 30 grams
  • dried rosemary

Instructions

MONTADITOS DE ENSALADILLA DE ATUN (OPEN FACED SANDWICHES WITH TUNA SALAD)

  1. Drain the cans of tuna into a fine sieve with a bowl underneath, flake the tuna (discard the oil) and add into a large bowl, along with the mayonnaise, onion, garlic and parsley, season with sea salt & black pepper, mix together until well mixed, cut the baguette into diagonal slices, add the tuna salad over each slice of baguette, top off each one with a green olive wrapped with an anchovy and pierced with a toothpick

SANDWICHES DE SALMON AHUMADO CON QUESO CREMOSO (SMOKED SALMON SANDWICHES WITH CREAM CHEESE)

  1. Spread the cream cheese (room temperature) over the slices of bread, top off each one with a slice of smoked salmon, stack them together in layers of two, then gently cut each one into four evenly sized squares, top off with finely chopped chives

BOCADOS DE QUESO BRIE CON MERMELADA DE FRESA (BRIE CHEESE AND STRAWBERRY JAM BITES)

  1. Cut the brie cheese into 1/4 inch (.635 cm) thick slices, add 2 slices over each craker, top off each one with a dollop of strawberry jam and a walnut

MONTADITOS DE MANCHEGO CON PIMIENTOS DEL PIQUILLO (OPEN FACED SANDWICHES WITH MANCHEGO & ROASTED PEPPERS)

  1. Cut the Manchego cheese into 1/4 inch (.635 cm) thick slices, cut the roasted peppers into thin strips and cut the baguette into diagonal slices, add 1 slice of Manchego cheese over each slice of baguette, top off with a couple strips of the roasted peppers, drizzle each one with a kiss of extra virgin olive oil and a dash of dried rosemary
