Classic Spanish Tuna Sandwich

Ingredients

  • 1 baguette
  • 2 cans tuna in olive oil 4 oz / 110 grams each
  • 1 tomato
  • 1/2 red onion
  • 10 black pitted olives
  • 1/2 cucumber
  • 4 leaves green lettuce
  • 1/2 cup low fat mayonnaise 120 grams
  • 1 clove garlic
  • 1 tsp lemon juice 5 ml
  • 1 tbsp extra virgin olive oil 15 ml
  • pinch sea salt
  • dash black pepper

Instructions

  1. Drain the cans of tuna into a fine sieve with a bowl underneath, gently flake the tuna and set aside

  2. Thinly slice the tomato, red onion, black olives, cucumber and wash & pat dry the leaves of lettuce

  3. To make the garlic mayo aioli, add the mayonnaise into a bowl, finely grate in the garlic, add in the lemon juice, extra virgin olive oil and season with sea salt & black pepper, whisk together until well mixed

  4. Cut the baguette into two 6 inch (15 cm) pieces and then cut each one open

  5. Add the lettuce in the bottom piece of the baguette, then the slices of tomato, season with sea salt & black pepper, then add in the tuna, black olives, red onion and cucumber, add a dollop of the garlic mayo aioli over the top piece of baguette, then place over the sandwich, enjoy!
