CREAMY Scrambled Eggs with Green Beans

Ingredients

  • 2 tbsp garlic infused olive oil 30 ml
  • 6 eggs
  • 1/2 lbs green beans 200 grams
  • pinch sea salt
  • dash black pepper

Instructions

  1. Fill a stock pot half ways with water, season generously with sea salt and heat with a high heat

  2. Meanwhile, rinse the green beans under cold water

  3. Once the water comes to a boil in the stock pot, add in the green beans, once it comes back to a boil, go for 3 to 4 minutes or until the green beans are just tender, then drain into a sieve and let them sit there so the water drains and they cool off

  4. Meanwhile, crack the eggs into a large bowl, season with sea salt & black pepper and whisk together until well mixed

  5. Heat a large nonstick fry pan with a low heat and add in the garlic infused olive oil

  6. Once the green beans are cool enough to handle, cut off the ends and then cut each one into 2 inch (5 cm) pieces, then add into the bowl with the whisked eggs and mix together

  7. Add the egg mixture into the pan with the hot oil, start mixing the mixture in small circular motions, after 1 minute and the eggs have some texture, start mixing everything together continuously

  8. After 3 to 4 minutes and the eggs are just cooked through and you´ve ended up with a creamy texture, remove from the heat

  9. Transfer into a large serving dish and serve at once, enjoy!
