Fried Calamari with Spanish Paprika and Lemon

Ingredients

  • 2 frozen cleaned tubes of squid
  • 1 tbsp lemon juice
  • 1 cup all-purpose flour
  • 1 tsp sweet smoked paprika
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1/2 cup sunflower oil
  • lemon wedges to serve
  • fresh parsley for garnish

Instructions

  1. Grab 2 frozen tubes of squid and rinse under cold running water, making sure to rinse out the inside of the body, pat dry the squid with paper towels and cut each body into 1/2-inch thick slices, add the squid rings into a bowl and drizzle in 1 tablespoon of fresh lemon juice and set aside

  2. Add 1 cup of all-purpose flour into a seperate bowl, along with a generous teaspoon of sweet smoked paprika, a generous teaspoon of sea salt and some freshly cracked black pepper, mix together until well combined, crack 2 organic eggs into another bowl, season with sea salt and beat the eggs

  3. To coat each squid ring, add to the flour mixture first, then into the egg wash and then back into the flour, do this until all the squid rings are coated

  4. Heat a fry pan with a medium-high heat and add 1/2 cup of sunflower oil, once the oil get´s very hot (about 3 to 4 minutes) start adding the squid rings, cook in batches to not over-crowd the pan, fry the rings for 1 minute per side, transfer to a plate with paper towels as you finish each batch

  5. Add the fried calamari to a serving dish, along with a couple wedges of lemon and garnish with some freshly chopped parsley, enjoy!
