The BEST-EVER Breakfast Sandwich with Crispy Eggs & Cheese

Ingredients

FOR THE SANDWICH

  • 4 pieces sandwich bread
  • 2 eggs
  • 1 tomato
  • 3 slices havarti cheese
  • 1/4 cup virgin olive oil 60 ml
  • dash garlic powder
  • dash onion powder
  • dash sweet smoked Spanish paprika
  • dash dried thyme
  • pinch sea salt
  • dash freshly cracked black pepper

FOR THE BATTER

  • 1/2 cup all-purpose flour 64 grams
  • 1/2 tsp baking powder 2 grams
  • 1/4 tsp sea salt 1.25 grams
  • 1/2 tsp garlic powder 1.64 grams
  • 1/4 tsp sweet smoked Spanish paprika .65 grams
  • 1/2 cup water 118 ml

EXTRAS

  • 1/2 cup sunflower oil 125 ml

Instructions

  1. To make the batter, add 1/2 cup all-purpose flour into a large shallow bowl, along with 1/2 tsp baking powder, 1/4 tsp sea salt, 1/2 tsp garlic powder and 1/4 tsp sweet smoked paprika, mix the dry ingredients together, then pour in 1/2 cup cold water and whisk together until you form a creamy batter with no lumps, set aside

  2. For the next step, heat a small fry pan with a medium-high heat and add in a 1/4 cup virgin olive oil, while the oil is heating, thinly slice 1 tomato and toast 4 pieces of bread

  3. After heating the olive oil for 3 to 4 minutes, add 1 egg into the pan, let the egg cook in the olive oil without moving it, this way it develops a crispy texture in the bottom, after 1 minute tilt the pan and splash the hot olive oil on top of the egg using a spatula, only do this for about 10 seconds to not over-cook the egg yolk, remove from the pan and cook your second egg the exact same way

  4. To assemble each sandwich, add 1/2 slice of cheese on top of a piece of toast, then add in 4 slices of tomato, season the tomatoes with sea salt, black pepper, a dash of garlic powder and a dash of onion powder, place another 1/2 slice of cheese over the tomatoes, add in 1 crispy fried egg, season the eggs with a dash of sweet smoked paprika and some dried thyme, place another 1/2 slice of cheese and a piece of toast on top, do not push down on the sandwich, otherwise you risk breaking the egg yolk

  5. Heat a small fry pan with a medium heat and add in 1/2 cup sunflower oil

  6. While the oil is heating, add the sandwich into the bowl with the batter, spoon the batter all over the top of the sandwich, don´t flip the sandwich into the batter, as you risk the chance of breaking the egg yolk

  7. After heating the oil for 4 minutes, carefully add the battered sandwich into the pan, shaking off any excess batter, after 2 to 2 1/2 minutes, gently flip the sandwich to fry the other side, after another 2 to 2 1/2 minutes remove the sandwich from the pan and transfer into a plate with paper towels, fry up your second sandwich in the same way, serve at once, enjoy!
