Pre-heat your oven with the bake/broil option to its highest setting

Add 1 red bell pepper to a baking tray, drizzle with a kiss of extra virgin Spanish olive oil and season with sea salt, wrap 2 cloves of garlic in foil paper and also add to the baking tray, insert into the oven between 18-20 minutes

Add 1 cup of jarred chickpeas (rinsed and cleaned) to a food processor, also add 1 tablespoon of toasted tahini paste, the juice of 1 small lemon, 1/2 teaspoon of smoked paprika and 1 clove of raw garlic

Once the bell pepper and garlics have cooled off, remove the skin and add them to the food processor, along with a 1/4 cup of extra virgin Spanish olive oil,1 tablespoon of water, then season with sea salt and freshly cracked black pepper

Process everything in the food processor for about 3 minutes or until you form a smooth paste

Add the hummus to a bowl, cover with seran wrap and add to the fridge for at least 1 hour to let all the flavors develop

When ready to be served, drizzle with some extra virgin Spanish olive oil on top and decorate with freshly chopped basil, serve with flatbreads or with cut up veggies
