Using a medium sized sauce pan, fill it with enough water to completely cover the potatoes

Turn the burner on to a medium-high heat

Once the water begins to boil add a pinch of sea salt to the water and add the two potatoes

Cover the sauce pan and lower the heat to a low-medium heat and cook for about 20-25 minutes.

Remove the potatoes from the sauce pan, pat dry and let them cool to room temperature

Cut potatoes in half and remove the skin

Cut each potato into 4 quarters

You should get about 6 cubes of potatoes from each quarter

Add the cut potatoes into a medium sized bowl

Season the potatoes with sea salt

Add the 1/3 cup aioli to the bowl and toss everything together

Once all the potatoes are coated in aioli transfer to a plate

Sprinkle with some freshly chopped parsley
