Spinach & Goat Cheese Salad with Homemade Honey Mustard Vinaigrette

  • 1 tbsp dijon mustard
  • 1 tbsp organic honey
  • 1/2 tbsp white wine vinegar
  • 2 tbsp extra virgin Spanish olive oil
  • Sea Salt
  • Black Pepper


  • -2 cups fresh spinach
  • -1 red onion
  • -1 tomato
  • -4 oz. goat cheese
  • -10 walnuts
  • sea salt
  • black pepper


  1. To make the honey mustard vinaigrette add 1 tablespoon of dijon mustard into a bowl, also add 1 tablespoon of organic honey, 1/2 tablespoon of white wine vinegar, 2 tablespoons of extra virgin Spanish olive oil and season lightly with sea salt & freshly cracked black pepper, then whisk everything together until you form a creamy texture
  2. To make the salad add 2 cups of bagged spinach into a shallow bowl, thinly slice 1 small red onion and add to bowl, thinly slice 1 ripe tomato and add to the bowl, crumble about 4 ounces of goat cheese on top and toss in 10 walnuts, season everything with sea salt and freshly cracked black pepper and drizzle in the honey mustard vinaigrette
  3. Enjoy!
