Spinach & Goat Cheese Salad with Homemade Honey Mustard Vinaigrette

Ingredients
FOR THE HONEY MUSTARD VINAIGRETTE
1tbspdijon mustard
1tbsporganic honey
1/2tbspwhite wine vinegar
2tbspextra virgin Spanish olive oil
Sea Salt
Black Pepper
FOR THE SALAD
-2 cups fresh spinach
-1 red onion
-1 tomato
-4 oz. goat cheese
-10 walnuts

Instructions
To make the honey mustard vinaigrette add 1 tablespoon of dijon mustard into a bowl, also add 1 tablespoon of organic honey, 1/2 tablespoon of white wine vinegar, 2 tablespoons of extra virgin Spanish olive oil and season lightly with sea salt & freshly cracked black pepper, then whisk everything together until you form a creamy texture
To make the salad add 2 cups of bagged spinach into a shallow bowl, thinly slice 1 small red onion and add to bowl, thinly slice 1 ripe tomato and add to the bowl, crumble about 4 ounces of goat cheese on top and toss in 10 walnuts, season everything with sea salt and freshly cracked black pepper and drizzle in the honey mustard vinaigrette
