The Most Incredible Apple Fritters with Spanish Almonds

Ingredients

  • 1/2 cup Spanish Almonds
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 cup white sugar
  • 1 tsp cinnamon powder
  • 1/4 tsp sea salt
  • 1/2 cup oat milk
  • 1 granny smith apple
  • 1/2 cup sunflower oil
  • powdered sugar
  • fresh raspberries

Instructions

  1. Add a generous 1/2 cup of Spanish almonds to a food processor and pulse for about 30 seconds, until the almonds are fully chopped into small pieces, reserve

  2. Add 1 cup of all-purpose flour into a large bowl, along with 1 teaspoon of baking powder, a 1/4 cup of white sugar, 1 teaspoon of cinnamon powder, 1/4 teaspoon of sea salt and the chopped almonds, mix together until well combined, then add 1/2 cup of oat milk and mix together until you form a sticky dough

  3. Peel 1 large granny Smith apple, then cut it into 4 quarters, remove the ends and core and roughly dice the apple quarters, add into the bowl with the dough and mix together until well incorporated

  4. Heat a small fry pan with a medium heat and add 1/2 cup of sunflower oil, after 3 minutes start adding spoonfuls of the batter into the hot oil, cook in batches to not over-crowd the pan, cook between 45-60 seconds per side and drain on paper towels when finished

  5. Once all your apple fritters are done sprinkle them with powdered sugar and serve at once, enjoy!
