Instructions

  1. Add 1 cup of blanched almonds to a baking tray lined with parchment paper and make sure they´re all in a single layer, add to a preheated oven, bake + broil option 210 C - 410 F between 6 to 7 minutes, then remove from the oven and transfer to a bowl

  2. Add 1 cup of all-purpose flour into a large bowl, along with 1 tsp of baking powder, a 1/4 cup of granulated sugar and a 1/4 tsp of sea salt, mix the dry ingredients together, then add in the roasted almonds, a 1/4 cup of honey and 1 large organic egg, mix together until well combined

  3. Using a dinner spoon, scoop up some of the cookie dough and add to a baking tray lined with parchment paper, using the spoon and your fingers flatten out the cookie, the design of the cookie does not matter, just make sure each cookie is the same thickness, you should end up with 9 to 10 cookies
