Healthy CREAMY Pasta with Tuna & Spinach | 30 Minute ONE-PAN Recipe

This Healthy Creamy Pasta with Tuna & Spinach is packed with flavors, easy to make and done in just 30 minutes. But the best part? It´s a one-pan pasta dish. Meaning the pasta get´s cooked in the same pan as the rest of the ingredients, giving it the most incredible flavor.

Healthy Creamy Pasta with Tuna & Spinach
To give this pasta that beautiful creamy texture, I used plain Greek yogurt instead of heavy cream. The secret is to add the yogurt in at room temperature, otherwise it can easily curdle. I used low-fat, but you can use full fat or even non-fat.

Healthy Creamy Pasta with Tuna & Spinach
For the pasta I used penne pasta. But you can use any type of thick cut pasta you like. The spinach I used was bagged spinach, but frozen spinach can be used here as well. Just make sure to fully thaw it out and pat it completely dry.

TIPS & TRICKS to Make this Recipe: Before you add in the Greek yogurt, make sure to let the pasta slightly cool off. This dish can be reheated on a low heat with a little broth added, to keep the creamy texture and for the yogurt to not curdle.

Ingredients

  • 1 small onion
  • 6 cloves garlic
  • 6 oz fresh spinach 175 grams
  • 2 cans tuna in olive oil 4 oz / 110 grams each
  • 14.5 oz can diced tomatoes 410 grams
  • 1 tsp dried oregano 1 gram
  • 1 tsp dried basil 1 gram
  • 1/2 tsp dried thyme .5 grams
  • 2 1/2 cups vegetable broth 540 ml
  • 8 oz penne pasta 8 oz / 225 grams
  • 1/2 cup plain Greek yogurt 175 grams
  • pinch sea salt
  • dash black pepper
  • dash white sugar

Instructions

  1. Drain the canned tuna into a fine sieve with a bowl underneath, flake the tuna, finely chop the onion, roughly chop the garlic and roughly chop the spinach

  2. Heat a large fry pan with a medium heat

  3. After 1 minute add in the olive oil from the canned tuna, the onion and garlic, mix together, after 3 minutes and the onion is translucent, add in the oregano, basil and thyme, quickly mix together, then add in the can of diced tomatoes and season with sea salt, black pepper and a dash of white sugar, mix together and simmer

  4. Once the canned tomatoes have slightly thickened, about 3 minutes, add in the broth and raise to a high heat, once it comes to a boil, add in the pasta, mix every 2 to 3 minutes

  5. About 8 to 9 minutes after adding the pasta and most of the broth has been absorbed, but there is still some broth left, add in the spinach, just over the pasta, place a lid on the pan and lower to a low-medium heat, simmer for 2 to 3 minutes or until all the broth has been absorbed, then remove from the heat

  6. Add in the drained tuna and mix together, let it rest for a couple of minutes to sligthly cool off, then add in the Greek yogurt at room temperature, season with black pepper, mix together until well mixed, serve at once, enjoy!

So, so good!! Such a nice change from traditional tuna casserole. I had fresh spinach I wanted to use but didn’t have any plain Greek yogurt, so I added 1/2 cup of whipping cream and let it cook down a bit. It came out wonderful! Next time I will have Greek yogurt on hand. Love this recipe. Thank you for sharing.

I loved this recipe! The addition of the Greek yogurt is genius! Also, using the tuna oil to sauté the veg was a great use of something I previously disposed. I did not have penne so I used whole wheat spaghetti. I did boil it separately from the sauce. I’m just not ready to do the raw pasta in the sauce so I omitted the extra liquid required for the pasta. it turned out fabulous! Thank you for the recipe!

Used kale instead of spinach just because that’s what was in the garden, but holy smokes, this far exceeded my expectations. Thank you so much for this recipe!

Can you heat the pasta back up after you add the yogurt or will it curdle. Can you reheat it the next day in the microwave? I’ve never cooked with yogurt but it sounds like a great idea.

You can lightly reheat, just add in more liquid if it gets too dry 🙂 Much love

Hola, my daughter’s team mate is from Castro Urdiales, Cantabria, Espana. She will be spending Thanksgiving with us for the 2nd year and I wanted to make a nice Spanish side dish for her.
It can be anything and doesn’t necessarily need to match our Thanksgiving giving meal. Just looking for a few ideas that will give her a home style Spanish comfort.

Very thankful for any recipes that you can provide.
