Spanish Eggs with Beans and Chorizo | EASY 20 Minute One-Pan Recipe
These Spanish eggs with beans and chorizo are what Spanish comfort food is all about. We’re talking a ton of great flavors, easy to make, and done in about 20 minutes using one pan. Serve this dish for breakfast, lunch, or dinner, and always next to a crunchy baguette for the ultimate Spanish treat.

To make this recipe, I used jarred butter beans, which are the same thing as the canned ones. If you can’t find butter beans in your area, you can use any other type of white beans. If you prefer dried beans, just soak them in plenty of water overnight, and then simmer them the following day for 1 to 2 hours or until just tender.

As for the chorizo, I used cured Spanish chorizo. This type of chorizo is ready to eat right out of the package. So you just want to lightly sauté it for 1 minute. Otherwise, it gets a tough texture. You can use other types of chorizo. Just make sure it’s firm. That way, once you cook it, it doesn’t fall apart.

TIPS & TRICKS to Make this Recipe: Before I add the eggs into the skillet. I like to crack them into individual bowls. This ensures no shells go in there and that the yolks are not broken.
