These Easy Mediterranean Pinwheels with Herbed Olive Oil are the perfect tapas appetizer for any occasion, from a holiday party to a family get-together to watching the big game. These pinwheels are easy to make, use very simple ingredients and are done in under 30 minutes. This is the kind of appetizer that everyone will love and will disappear before you even sit down! For this recipe I used premade pizza dough instead of tortillas, just because the pizza dough adds a better texture and flavor.
– Sciabica´s California Olive Oil –
The inspiration behind this recipe came to me because I received a couple samples of olive oil from Sciabica´s olive oil, which are located in Modesto, California. They sent me a garlic flavored extra virgin olive oil and a Mediterranean Medley extra virgin olive oil, both where absolutely amazing. I used the Mediterranean Medley in this recipe, this olive oil is first pressed with fresh herbs and the flavor is out of this world good, really took these pinwheels to the next level in goodness. Easy Mediterranean Pinwheels with Herbed Olive Oil
Ingredients
- -1 premade pizza dough
- -all-purpose flour
- -4 ounces goat cheese
- -6 roasted red bell peppers
- -1 cup spinach
- -onion powder
- -garlic powder
- -sea salt
- -black pepper
- -Sciabicas Mediterranean Medley extra virgin olive oil
Instructions

Roll out 1 premade pizza dough, rub some all-purpose flour on both sides of the dough so it won´t stick, evenly spread in 4 ounces of soft goat´s cheese, grab 6 jarred roasted peppers and pat dry with paper towels, then cut each one open and then in half, add the roasted peppers on top of the goat cheese, season everything with garlic powder, onion powder, sea salt and freshly cracked black pepper, add a handful of bagged spinach and evenly spread around in a single layer, add a drizzle of Sciabica´s Mediterranean olive oil on top and season with sea salt

Start to tightly and gently roll the dough around filling to form a log, then cut it into pieces that are 1-inch thick, add the pinwheels to a baking tray lined with parchment paper and into a preheated oven, bake+broil option at 210 C - 410 F between 11-13 minutes

After baking the pinwheels add them to a serving dish and brush some Sciabica´s Mediterranean olive oil on top of each pinwheel, serve at once, enjoy!
