“Better than White Bean Chili” CREAMY Beans with Caramelized Onions

These creamy beans with caramelized onions are what healthy comfort food is all about. They’re filled with flavors, made with basic pantry staples, and all done in about 30 minutes. Serve them as a side dish or even as a main course, as they certainly have enough protein.

To make this recipe, I used canned white beans. Just to make things quicker and easier. If you prefer, you can also use dried white beans. Just soak them in plenty of water overnight and then simmer them the next day for 1 to 2 hours or until tender.

To make the cream sauce, I used a combination of low-fat milk and vegetable broth. You can use any type of milk you like, even a plant-based one. As for the broth, chicken broth or even beef broth can also be used.

TIPS & TRICKS to Make this Recipe: It took me about 15 to 20 minutes on a medium heat to lightly caramelize the onions. It might take you less or more. Just make sure to mix them every 2 to 3 minutes so they all sauté evenly.

CREAMY Beans with Caramelized Onions

Ingredients

  • 4 tbsp extra virgin olive oil 60 ml
  • 2 medium onions (thinly sliced)
  • 4 cloves garlic (roughly chopped)
  • 1 tbsp all purpose flour 8 grams
  • 1 tsp dried oregano 1 gram
  • 1/2 tsp dried thyme 0.50 grams
  • 3/4 cup low fat milk 180 ml
  • 3/4 cup vegetable broth 180 ml
  • 2 cans white beans 15.5 oz / 440 grams each
  • 2 tbsp grated Manchego cheese 15 grams
  • 2 tsp lemon juice 10 ml
  • sea salt & black pepper
  • chopped chives for garnish

Instructions

  1. Heat a fry pan with a medium heat and add in 2 tbsp (30 ml) olive oil

  2. After a couple of minutes, add in the sliced onions and a pinch of salt, mix together, then mix every 2 to 3 minutes so they all saute evenly

  3. At the same time, heat a large fry pan with a medium heat and add in 2 tbsp (30 ml) olive oil

  4. After a couple of minutes, add in the chopped garlic and mix continuously, after 30 to 45 seconds and the garlic is fragrant, add in the flour and continue to mix together for 2 minutes, then add in the oregano and thyme and quickly mix together, then add in the milk and vegetable broth, and continue to gently mix together for a few minutes

  5. Once you end up with a slightly creamy sauce, about 5 minutes, add in the canned white beans (drained and rinsed), and season with salt & pepper, mix together, then lower to a low heat and simmer

  6. After sautéing the onions for 15 to 20 minutes and they're lightly caramelized, season with salt & pepper, mix together, and then turn off the heat

  7. After simmering the beans for 5 minutes, turn off the heat, add in the grated cheese and lemon juice, and give it one final mix

  8. Transfer the creamy beans into shallow bowls, top off with some of the caramelized onions, cracked black pepper, and some chopped chives, serve at once, enjoy!
