You can serve these wraps as a main course, a side dish or even as a snack on the go. Either way, they promise to fill your body with so much goodness.

For the lettuce I used small heads of lettuce, very similar to bibb lettuce. But you can use other types of lettuce here, such as iceberg lettuce or romaine. Or you can even use corn or flour tortillas if you like.

Creamy Tuna & Chickpea Lettuce Wraps

Ingredients

  • 1 can chickpeas 15.5 oz / 440 grams
  • 2 cans tuna in olive oil 4 oz / 111 grams each
  • 1/2 cup low fat greek yogurt 145 grams
  • 1 small red onion
  • 1 large tomato
  • handful fresh parsley
  • 1 clove garlic
  • 1 tbsp lemon juice 15 ml
  • 2 small heads of lettuce
  • pinch sea salt
  • dash black pepper

Instructions

  1. Drain the can of chickpeas into a colander, rinse under cold water, shake off any excess water and add into a large bowl

  2. Drain the cans of tuna into a fine sieve with a bowl underneath, flake the tuna and add into the bowl with the chickpeas (discard the oil from the canned tuna)

  3. Add the Greek yogurt over the tuna and chickpeas, finely chop the onion, tomato and parsley, add into the bowl with the rest of the ingredients

  4. Finely grate the garlic over the ingredients, squeeze in the lemon juice and season with sea salt and a generous portion of black pepper, gently mix together until well mixed

  5. Gently remove the leaves from the head of lettuce, rinse under cold water, add to a salad spinner and spin dry (or use a dishcloth)

  6. Add the creamy tuna & chickpea mixture into the leaves of lettuce , serve at room temperature or chilled, enjoy!

    Cant wait to make this soon for me can i use mushrooms / coconut yogurt and wraps instead as am not a big fan of lettuce i never had creamy tuna chickpea lettuce wraps before perfect for my after office meals love your recipes as always brightens up my day everyday after work
