“Better than Hash Browns” CRISPY Garlic Potato Fritters
These crispy garlic potato fritters, known as tortitas crujientes de patatas, are what comfort food is all about. We’re talking a light crispy texture with a ton of great flavors, simple everyday ingredients, and all done in about 30 minutes. Serve them as a tapas appetizer or even as a side next to some fried eggs.

To make this recipe, I used yukon gold potatoes, but you can use any type of potatoes you like. Either way, I peeled the potatoes before shredding them, as the flavor overpowers the fritters. If you prefer, you can keep the skins on the potatoes.

I served these potato fritters next to a spicy yogurt sauce that truly complements the fritters. Made with just Greek yogurt, garlic, hot smoked paprika, lemon juice, and olive oil. You can sub crushed red pepper for hot smoked paprika to achieve the spicy kick.

TIPS & TRICKS to Make this Recipe: It took me about 4 minutes per side to crisp up the fritters. It might take you less or more. Just ensure the heat is on medium and nothing higher. Otherwise, the fritters will brown too quickly on the outside and not fully cook on the inside.

CRISPY Garlic Potato Fritters | Tortitas Crujientes de Patatas
Ingredients
FOR THE POTATO FRITTERS
- 2 medium potatoes (peeled) 1 lbs / 450 grams
- 1 small onion
- 1/2 cup all purpose flour 60 grams
- 1/2 tsp baking powder 2 grams
- 1 large egg
- 1/3 cup club soda 90 ml
- 6 cloves garlic (roughly chopped)
- 1/2 tsp sweet smoked Spanish paprika 1.25 grams
- 2 tbsp chopped chives 5 grams
- sea salt & black pepper
FOR THE SPICY YOGURT DIP
- 1 container plain Greek yogurt 5.3 oz / 150 grams
- 2 cloves garlic (finely grated)
- 1 tsp hot smoked Spanish paprika 2.50 grams
- 2 tsp lemon juice 10 ml
- 1 tbsp extra virgin olive oil 15 ml
- sea salt & black pepper
EXTRAS
- 1/4 cup extra virgin olive oil 60 ml
- chopped chives for garnish
Instructions

Using a box grater, finely shred the potatoes and onion, then add the shredded ingredients over a cheesecloth and squeeze all the water out

Add the flour and baking powder into a large bowl, mix together, then make a well in the middle, crack in the egg and whisk the egg, and then add in the club soda and whisk everything together until you get a smooth batter

Add the shredded potatoes and onion over the batter, along with the chopped garlic, sweet smoked paprika, chopped chives, and season with salt & pepper, mix together until well mixed

Heat a large fry pan with a medium heat and add in the olive oil

After a couple of minutes and the oil is nice and hot, start adding in spoonfuls of the batter and gently pushing down on each one, you want all the fritters in a single layer and evenly spaced, so cook in batches to not overcrowd the pan, fry for 4 minutes per side or until golden and crispy, then transfer into a dish with paper towels

To make the spicy yogurt sauce, add the Greek yogurt into a bowl, along with the grated garlic, hot smoked paprika, lemon juice, olive oil, and season with salt & pepper, whisk together

Transfer the yogurt sauce into a serving dish and decorate the fritters around it, garnish with chopped chives, enjoy!
