“Better than Cornbread” CRISPY Spanish Corn Fritters

These crispy Spanish corn fritters, known as tortitas crujientes de maiz, are possibly the best fritters ever. We’re talking a light crispy texture with a ton of delicious flavors, basic pantry staples, and all done in about 30 minutes. Serve them as a tapas appetizer or even as a side. Either way, they promise to fill you with goodness.

To make the batter, I used a combination of all-purpose flour and yellow corn flour. You can also use cornmeal instead of yellow corn flour. As for the liquid, I used low-fat milk, but you can also use full-fat, nonfat, or even a plant-based milk.

I served these crispy corn fritters next to a spicy yogurt sauce that truly elevates the fritters. Made with plain Greek yogurt, garlic, hot smoked paprika, lemon juice, and olive oil. You can also use crushed red pepper for hot smoked paprika to get that spicy kick.

TIPS & TRICKS to Make this Recipe: It took me about 4 minutes per side to crisp up the corn fritters. It might take you less or more. Just ensure the heat is on medium and nothing higher. Otherwise, the corn fritters will brown too quickly on the outside and not fully cook on the inside.

CRISPY Spanish Corn Fritters | Tortitas Crujientes de Maiz

Ingredients

FOR THE FRITTERS

  • 2 tbsp extra virgin olive oil 30 ml
  • 1 medium onion (finely chopped)
  • 4 cloves garlic (roughly chopped)
  • 1/2 cup all purpose flour 60 grams
  • 1/4 cup yellow corn flour 30 grams
  • 1 tsp baking powder 4 grams
  • 1 large egg
  • 1/2 cup low fat milk 120 ml
  • 1 can corn kernels 5 oz / 150 grams
  • 1/4 cup grated Manchego cheese 30 grams
  • 2 tbsp chopped chives 5 grams
  • sea salt & black pepper

FOR THE SPICY YOGURT SAUCE

  • 1 container plain Greek yogurt 5 oz / 150 grams
  • 2 cloves garlic (finely grated)
  • 1 tsp hot smoked Spanish paprika 2.50 grams
  • 2 tsp lemon juice 10 ml
  • 1 tbsp extra virgin olive oil 15 ml
  • sea salt & black pepper

EXTRAS

  • 1/4 cup extra virgin olive oil 60 ml
  • chopped chives for garnish

Instructions

  1. Heat a large fry pan with a medium heat and add in 2 tbsp (30 ml) olive oil

  2. After a couple of minutes, add in the chopped onion and garlic, mix continuously, after 4 minutes and the ingredients are lightly sautéed, turn off the heat

  3. Add the flour into a large bowl, along with the yellow corn flour and baking powder, whisk together, then make a well in the middle, crack in the egg, and whisk the egg, and then add in the milk, and whisk everything together until you get a smooth batter

  4. Add the sautéed onions and garlic into the batter, along with the canned corn kernels (drained), grated cheese, chopped chives, and season with salt & pepper, mix together until well mixed

  5. Heat the same large fry pan with a medium heat, and add in 1/4 cup (60 ml) olive oil

  6. After a couple of minutes and the oil is nice and hot, start adding in spoonfuls of the batter and gently pushing down on each one, you want all the fritters in a single layer and evenly spaced, so cook in batches to not overcrowd the pan, fry for 4 minutes per side or until golden and crispy, then transfer into a dish with paper towels

  7. To make the spicy yogurt sauce, add the Greek yogurt into a bowl, along with the grated garlic, hot smoked paprika, lemon juice, olive oil, and season with salt & pepper, whisk together until you get a creamy sauce

  8. Transfer the spicy yogurt sauce into a serving dish, and decorate the fritters around it, top off with chopped chives, enjoy!
