Spaniards are huge lovers of garlic, and with good reason why, garlic is the one root vegetable that can transform any dish, and give it a distinct and memorable flavor. Infact, there are few dishes in Spain that don´t contain garlic, and I believe it´s only dessert´s that don´t contain this pungent vegetable. Now, what happens when you get some fresh mushrooms and stuff them with garlic? You end up with one of the best tapas ¨appetizer¨ you will ever taste. This recipe of garlic stuffed mushrooms truly brings out the flavor of the garlic, as it sizzles inside of the mushroom while being cooked. Garlic Stuffed Mushrooms
Ingredients
- 6 X-Large Button Mushrooms
- 3 Tbsp Extra Virgin Spanish Olive Oil
- 3 Cloves of Garlic Minced
- Fresh Parsley
- Sea Salt
Instructions

Pre-heat your oven to 210 C (410 F)

After cleaning and drying your mushrooms, remove the stalks from the mushrooms, with a butter knife remove the excess stalk to make a bigger hole in the mushroom

Add the mushrooms to a bowl with 1 tbsp of extra virgin Spanish olive oil, a pinch of sea salt and toss together

Using a mortar & pestle, add 3 minced garlics and pound the garlic until it becomes a paste

Add a generous pinch of freshly chopped parsley to the mortar and pound with the garlic

Next add 2 tbsp of extra virgin Spanish olive oil to the mortar and a pinch of sea salt and mix everything together

Add the mushrooms onto a baking tray with some parchment paper and fill each mushroom hole with the garlic and parsley sauce

Add the baking tray to the oven

After about 15 minutes, take the mushrooms out of the oven and transfer to a plate

Garnish with some freshly chopped parsley

Hi, question = how far in advance can I stuff the mushrooms before baking them? I thought that the oil might make the mushroom soggy if I did it hours before or the night before.

You can stuff ahead of time, the oil wont make the mushroom soggy, about 8 hours in advance 🙂 much love
