GARLICKY Olive Cheese Bread | CRAZY Delicious & Easy to Make

This garlicky olive cheese bread is what comfort food is all about. It’s filled with flavors, made with simple ingredients, and comes together in a jiffy. Serve it as a tapas appetizer or even as a side. Either way, it’s the kind of food that’s going to fill you with so much goodness.

To make this recipe, I used a combination of Manchego cheese and Swiss cheese. You can use any type of cheese you like or whatever you have on hand. However, the combo of these two cheeses gives this bread an incredible lift of flavors.

For the bread, I used a baguette. You can use any type of bread you like. Just make sure it has a hard shell on it. That way, once you add the cheese and olive mixture, it doesn’t get mushy and break apart.

TIPS & TRICKS to Make this Recipe: You can prep the bread ahead of time and put it in the fridge or freezer covered with saran wrap. It will hold for up to 3 days in the fridge and freeze for up to 3 months. When ready to use, just pop it in the oven and bake.

GARLICKY Olive Cheese Bread

Ingredients

  • 1/4 cup butter (at room temperature) 60 grams
  • 1/4 cup extra virgin olive oil 60 ml
  • 4 cloves garlic (finely grated)
  • 2 tbsp chopped parsley 5 grams
  • 1 cup shredded Manchego cheese 120 grams
  • 1 cup shredded Swiss cheese 120 grams
  • 1/2 cup sliced green olives 55 grams
  • 1/2 cup sliced black olives 60 grams
  • 1/4 cup grated Manchego cheese 30 grams
  • 1 baguette
  • sea salt & black pepper
  • chopped chives for garnish

Instructions

  1. Add the butter into a large bowl, along with the olive oil, grated garlic, and chopped parsley, whisk together until you get a mixture with lumps, then add in the grated Manchego cheese, grated Swiss cheese, sliced green olives, sliced black olives, and season with a kiss of salt & black pepper, mix together until well mixed

  2. Cut the baguette in half lengthwise, then scoop some of the innards to create a shallow well

  3. Evenly spread the cheese mixture onto the two pieces of baguette, then top off with the grated cheese, making sure to cover the entire surface of each bread

  4. Add the stuffed breads into a baking tray that's lined with parchment paper and put them into a preheated oven at 350°F / 175°C for 15 to 20 minutes, or until the cheese is fully melted

  5. Once the cheese is fully melted, remove from the oven and let the bread rest for a couple of minutes before serving, then top off with chopped chives and enjoy!
