Being a fan of sweet potatoes, I wanted to create a tapas appetizer highlighting this incredible root vegetable, and well, these Grilled Sweet Potatoes with Garlic Yogurt Aioli really hit the spot.This recipe for Grilled Sweet Potatoes is the perfect way to enjoy this amazing produce. This dish is loaded with dimensions of flavors and done in under 30 minutes. Perfect as an appetizer for a party or family get-together, or you can even serve them up as a side dish next to some grilled fish and a warm goat cheese salad.

Sweet Potatoes, More than Just an Ordinary Potato

Long gone are the days where people prefered regular potatoes over sweet potatoes, and with good reason why. Sweet potatoes are loaded with super great health benefits, they´re high in antioxidants, boosts brain function and enhance the immunce system, among other benefits. I did try this recipe of Grilled Sweet Potatoes with Garlic Yogurt Aioli with regular yukon gold potatoes, and I tell yeah, it was no match, the sweetness from the sweet potatoes really took this dish to the next level. Grilled Sweet Potatoes with Garlic Yogurt Aioli

Ingredients

  • -1 large sweet potato
  • -2 tbsp extra virgin Spanish olive oil
  • -sea salt
  • -black pepper
  • -smoked paprika
  • -dried thyme
  • -1 clove of garlic
  • -1 cup Greek yogurt
  • -1/2 teaspoon dried parsley
  • -1/2 teaspoon white wine vinegar
  • -1/2 teaspoon lemon juice
  • sea salt
  • black pepper
  • -1 tbsp extra virgin Spanish olive oil
  • -fresh parsley to garnish

Instructions

  1. To make the garlic yogurt aioli, finely mince 1 clove of garlic and add it to a mortar, using a pestle pound down on the garlic until you form a paste, then add 1 cup of Greek yogurt, 1/2 teaspoon white wine vinegar, 1/2 teaspoon fresh lemon juice, 1/2 teaspoon dried parsley, season generously with sea salt and freshly cracked black pepper and mix everything together, while you continue to mix slowly pour in about 1 tablespoon of extra virgin Spanish olive oil, then cover with seran wrap and add to the fridge
  2. Grab 1 large sweet potato, rinse it under cold running water and scrub it well, pat dry with paper towels and start cutting it in slices that are between 1/4 inch to 1/8 of an inch in thickness
  3. Line the slices of sweet potatoes in a single layer on a cutting board and brush the tops of them with some extra virgin Spanish olive oil, then season with sea salt and freshly cracked black pepper, then dust them off with some smoked paprika and a sprinkle of dried thyme
  4. Heat a large grilling pan with a medium heat, once the pan get´s hot start adding the slices of sweet potatoes (seasoned side down) into the grilling pan, then brush the tops of them with some extra virgin Spanih olive oil and season with sea salt, grill them between 2 1/2 to 3 minutes per side, cook in batches to not over-crowd the pan
  5. Transfer the garlic yogurt aioli to a bowl and place on a plate, decorate the grilled sweet potatoes around the garlic yogurt aioli and garnish with some freshly chopped parsley
  6. Enjoy!

    I am wondering if you could bake those potato slices in the oven. I don’t have a grilling fry pan and worry that they may stick although I have a good non stick frying pan, just think that baking them would be less work too or would they have a totally different texture?
