Homemade Garlic & Onion Bread Rolls
Ingredients
- -4 tbsp extra virgin Spanish olive oil
- -4 cloves garlic
- -1 large onion
- -1 cup spelt flour
- -1 cup all-purpose flour
- -2 tsp baking powder
- -1/2 tsp sugar
- -1 tsp sea salt
- -2/3 cup luke warm water
EXTRAS
- extra virgin Spanish olive oil
- dried thyme
- sea salt
Instructions

Finely mince 4 cloves of garlic and finely dice 1 large onion, heat a small non-stick frying pan with a medium heat and add 2 tablespoons of extra virgin Spanish olive oil, once the oil get´s hot add the diced onions and minced garlic and mix with the oil, you want to cook them between 7 to 8 minutes stirring occasionally, until the onions get a light golden color, then turn off the heat and set aside

Add 1 cup of all-purpose flour into a large bowl, also add 1 cup of spelt flour, 2 teaspoons of baking powder, 1 teaspoon of sea salt and 1/2 teaspoon of white sugar, mix all the dry ingredients together, then add 2 tablespoons of extra virgin Spanish olive oil, 2/3 cup of water and the onion and garlic mixture and mix everything together until you form a dough, then lightly knead it inside of the bowl for about a minute just to combine everything together and shape it into a ball

Add some all-purpose flour onto a flat surface, add the ball of dough on top and cut it in half, then shape each half into a ball, cut each ball of dough into 4 quarters to end up with 8 evenly sized pieces of dough and shape each one into a ball

Add the balls of dough onto a baking tray lined with parchment paper, lightly press down on each ball of dough to give it a circular shape, the thickness of each dough should be 1/2 inch thick, brush the tops of each dough with a kiss of extra virgin Spanish olive oil, lightly season with sea salt and sprinkle with some dried thyme

Add the baking tray to a pre-heated oven, bake and broil option, 190 C - 375 F between 23-25 minutes, then take the rolls out of the oven and transfer them to a wire rack, cool for 5 minutes and serve
