Ingredients

FOR THE PIZZA SAUCE

  • -1 tbsp extra virgin Spanish olive oil
  • -1 cloves garlic minced
  • -1 cup tomato puree
  • -1/2 tsp dried oregano
  • -1/2 tsp dried parsley
  • -sea salt
  • -black pepper
  • -white sugar

FOR THE DOUGH

  • -1/2 cup all purpose flour
  • -1/2 cup spelt flour
  • -1 tsp baking powder
  • -1/2 tsp sea salt
  • -1/4 tsp white sugar
  • -1 tbsp extra virgin Spanish olive oil
  • -1/3 cup water

EXTRAS

  • -1 ball fresh mozzarella
  • -dried oregano
  • -fresh basil leaves

Instructions

  1. Begin by making the marinara sauce, heat a small sauce pan with a medium heat and add 1 tablespoon of extra virgin Spanish olive oil, 2 minutes after adding the oil add 1 clove of minced garlic and mix with the oil, about a minute later add 1 cup of tomato puree, season with sea salt, freshly cracked black pepper and a pinch of white sugar to cut the acid from the tomatoes, then add 1/2 teaspoon of dried oregano and 1/2 teaspoon of dried parsley and mix everything together until well combined, then lower the fire to a LOW heat to simmer
  2. To make the dough add 1/2 cup of all-purpose flour into a large bowl, along with 1/2 cup of spelt flour, 1 teaspoon of baking powder, 1/2 teaspoon of sea salt and 1/4 teaspoon of white sugar, mix the dry ingredients together, then add 1 tablespoon of extra virgin Spanish olive oil, 1/3 cup of water and mix everything together, once you form a dough get in there with your hands and lightly knead it inside of the bowl between 1-2 minutes, then shape the dough into a ball
  3. Sprinkle some all-purpose flour on a flat surface, add the ball of dough on top, cut it in half and shape each half into a ball, gently push down on each ball of dough with the palm of your hand, then start rolling out each dough, you want a circular shape with a thickness between 1/8 to 1/16 of an inch
  4. Grab a 10-inch diameter nonstick frying pan, drizzle in a kiss of extra virgin spanish olive and mold one of the rolled out doughs into the pan, transfer the pan to the stove top, heat with a medium heat and cook for about 3 minutes (do this with the other dough as well), after cooking remove pan from the heat, gently take the dough out of the pan, drizzle in another kiss of extra virgin Spanish olive oil and add the dough back into the pan uncooked side in the bottom
  5. Evenly divide the marinara sauce on top of the dough, add a couple slices of fresh mozzarella and a sprinkle of dried oregano, place a lid on the pan, return to the stove top and heat with a LOW HEAT, cook for about 6 minutes or until the cheese is fully melted, gently take the pizza out of the pan and transfer to a cutting board, garnish with fresh basil leaves
  6. Enjoy!
