Open faced sandwiches, known as ¨Montaditos¨ in Spain, are a clever way of assembling different types of flavors into one bite. The combination of flavors you can combine are endless, and there is no set recipe, so you can pretty much create any flavors you want. In this recipe of open faced sandwiches, we will be making 3 different flavors that will surely make your tastebuds happy. These ¨montaditos¨ are very easy to assemble, and are the perfect appetizer for any party or get-together. The secret in making your open faced sandwiches stand out, is to use a really crusty baguette that does not have heavy bread dough in the inside. Basically, the lighter the baguette, the better. Open Faced Sandwiches
Ingredients
- 1 Baguette
- 1 Tin of tuna packed in olive oil
- 1 Roasted red bell pepper cut into strips
- 1 Tin of anchovies packed in olive oil
- 4 Thin slices of queso Manchego
- 2 Tbsp tomato preserves
- 3 Tbsp cream cheese
- 2 Slices smoked salmon
- Fresh Parsley
- Fresh Chives
- Extra Virgin Spanish Olive Oil
Instructions

Pre-heat your oven to 210 C (410 F)

Cut your baguette into 1 inch thick diagonal slices (6 evenly sized slices needed for this recipe)

Add the slices of bread to a baking tray with foil paper and lightly drizzle extra virgin oive oil on top of each slice

Insert the baking tray into the oven and toast the bread slices for about 2 minutes

For the first flavor combination of open faced sandwiches, you will need 1 tin of tuna, 1 roasted red bell pepper and 1 tin of anchovies

Spread the tuna over 2 slices of bread, add two strips of red bell pepper to each slice of bread, top off each slice of bread with 1 anchovie, and garnish with some fresh parsley

For the second flavor combination of open faced sandwiches, you will need 4 slices of queso Manchego and 2 tablespoons of tomato preserves

Add 4 slices of queso Manchego onto 2 slices of bread (2 slices of cheese per bread), add 1 tablespoon of tomato preserves to each slice of bread, and garnish with fresh parsley

For the last flavor combination of open faced sandwiches, you will need 3 tablespoons of cream cheese and two slices of smoked salmon

Evenly spread the cream cheese onto 2 slices of bread, add 1 slice of smoked salmon onto each slice of bread, and garnish with fresh chives
