Easy to Make Oven-Roasted Salmon Recipe with Saffron Dijon Sauce
– Oven-Roasted Salmon Recipe with Saffron Dijon Sauce –
This Oven-Roasted Salmon Recipe with Saffron Dijon Sauce has an incredible combination of flavors, super easy to make and done in under 30 minutes. I chose to oven-roast the salmon instead of sear it because it worked better with the saffron dijon sauce, flaky & soft and ready to absorb all the flavors, plus it´s easier 🙂 . This dish has a rich and exotic flavor, yet it´s healthy, high in protein and gluten-free. I used fresh salmon to make this dish, but you can always use frozen salmon, just make sure you thaw it out before you start cooking.
– Golden Saffron –
I was sent some saffron from Golden Saffron. They are a company based out of southern California. There focus is on only sourcing the highest-quality Persian saffron threads. Well, after tasting it, I concur. Golden saffron has a deep and rich golden orange color and the flavor is out of this world. I highly recommend you try this saffron, it´s an absolute gem. You can buy some directly from Golden Saffron. Watch the video below on how to make this Oven-Roasted Salmon Recipe with Saffron Dijon Sauce or check out the recipe card below, which you can print. Ingredients
FOR THE SALMON
- -2 fresh salmon fillets
- -1 tbsp extra virgin Spanish olive oil
- -1 tsp lemon juice
- -sea salt
- -black pepper
FOR THE SAFFRON DIJON SAUCE
- -2 tbsp extra virgin Spanish olive oil
- -1 clove of garlic
- -2 tbsp white wine
- -1/2 tsp GOLDEN saffron threads
- -1/2 tbsp dijon mustard
- -sea salt
- -black pepper
EXTRAS
- -fresh Rucula
- -fresh chives
Instructions
-
Grab 2 fillets of fresh salmon (about 1 inch in thickness each), drizzle them with extra virgin Spanish olive oil and a squeeze of fresh lemon juice, rub all over the fillets and season with sea salt and freshly cracked black pepper, add the salmon fillets to a baking dish lined with parchment paper and into a pre-heated oven bake and broil option 210 C - 410 F between 13-15 minutes
-
To make the saffron dijon sauce add 1/2 teaspoon of Golden saffron threads into a mortar and using a pestle pound down on the saffron until you form a powder, then heat a small nonstick frying pan with a medium heat and add 2 tablespoons of extra virgin Spanish olive, about 30 seconds later add 1 clove of minced garlic and mix with the oil, about 30 seconds later (you don´t want the garlic to get brown just fragrant) add 2 tablespoons of white wine and mix continuously until the wine reduces in half (about 2 minutes), then add the mixture into the mortar with the saffron and let it infuse for 3 minutes or until it cools off, then add a generous 1/2 tablespoon of dijon mustard and mix together until you form a mayo like consistency
-
Once the salmon is roasted take it out of the oven, add some rucula to a plate, place the salmon fillets on top, spoon the saffron dijon sauce over the fillets, garnish with fresh lemon wedges and a sprinkle of freshly chopped chives, enjoy!
