Pan Grilled Spanish Salmon with Tomato Sauce
This Pan Grilled Spanish Salmon with Tomato Sauce is the answer to a quick & healthy dinner. It´s loaded with flavors, easy to make and done in under 30 minutes. The perfect dish for a busy weeknight, or even better, for a relaxed weekend lunch next to a glass of wine.
For this recipe I used fresh salmon, but you can totally use frozen salmon here. Just make sure you completely thaw it out first, then pat it dry with paper towels. This will give the salmon a better texture & flavor, as it will remove any excess water from the salmon.
What really makes this dish ¨pop¨ with flavor is the simple tomato sauce. Made with simplest ingredients: Canned tomato sauce, sweet smoked Spanish paprika and white wine. If you are not a fan of white wine you can skip it. But the white wine is what adds depth to the sauce and gives it that amazing flavor.
The other important ingredient here is the olive oil, as this is what helps flavor the salmon and the tomato sauce. For this recipe I used an extra virgin olive oil from Barton Olive Oil Co. Their estate extra virgin olive oil has a beautiful aroma and an incredible balance of flavors. Made with a blend of Spanish and Tuscan olives. Every kitchen should have a bottle of this divine olive oil.

Pan Grilled Spanish Salmon with Tomato Sauce
Ingredients
- 4 fillets fresh salmon 4 oz each
- 1 tbsp Barton extra virgin olive oil
- 2 cloves garlic
- 1/2 onion
- 1/2 tsp sweet smoked paprika
- 1/4 cup white wine
- 3/4 cup canned tomato sauce
- pinch sea salt
- pinch black pepper
- handful freshly chopped parsley
- 1 lemon
Instructions

Finely mince 2 cloves of garlic, finely dice 1/2 of an onion and season four 4 oz fillets of fresh salmon with sea salt & freshly cracked black pepper

Heat a nonstick fry pan with a medium-high heat and add 1 tbsp of extra virgin olive oil, after heating the oil for 1 minute add the salmon fillets into the pan seasoned side down, after 3 minutes flip the salmon (the thickness of my fillets where 3/4 inch thick), after a total cooking time of 6 minutes remove the salmon from the pan and transfer to a dish

Using the same pan with the same heat add the diced onions and minced garlic into the pan, mix around with the oil making sure to scrape up anything that was left over from the salmon, after 1 to 2 minutes add in 1/2 tsp of sweet smoked paprika and mix it all together, once it´s all mixed add in a 1/4 cup of white wine and mix together, after 1 minute add in 3/4 cup of canned tomato sauce and season with sea salt & black pepper, mix together until well combined and lower the fire to a low-medium heat

After simmering the sauce for 4 to 5 minutes add the the salmon fillets back into the pan and heat through for 2 minutes, then remove the pan from the heat and serve directly from the pan, garnish each salmon fillet with fresh lemon slices and a sprinkle of fresh parsley, enjoy!
