Typically here in Spain, we always season our scrambled eggs before they are cooked. However, there has been a string of celebrity chefs saying to season after you cook them. As the salt breaks down the proteins in the eggs.
There seems to be a lot of confusion about this subject nowadays. So I decided to do an experiment and cook both versions. Scrambled eggs that have been seasoned before cooked and another seasoned after cooked, and find out if there is an actual difference. My verdict? Watch the video below to find out.
TIPS & TRICKS to Make this Recipe: Always cook your scrambled eggs in a low-medium heat. Anything higher and the eggs will cook too fast and become overly dry. I like to add a little cold water into the whisked eggs before I cook them. The water adds a steaming effect when cooked and helps give the eggs a flufflier texture.

Should you Season Scrambled Eggs Before or After you Cook them?
Ingredients
- 6 large cage-free organic eggs
- 2 tbsp extra virgin olive oil 30 ml
- sea salt & black pepper
- handful freshly chopped chives
- 2 tbsp cold water (30 ml)
Instructions
Scrambled Eggs Seasoned Before Cooked

Crak 3 large eggs into a bowl, season with sea salt & black pepper, whisk together until well mixed, then add in 1 tbsp (15 ml) cold water and give it one final whisk

Heat a small nonstick fry pan with a low-medium heat and add in 1 tbsp (15 ml) extra virgin olive oil

After 2 minutes add in the seasoned whisked eggs, gently mix the eggs in a circular motion and then towards the center, exactly 2 minutes after adding the eggs they should be perfectly cooked, remove from the heat, transfer to a dish and sprinkle with freshly chopped chives
Scrambled Eggs Seasoned After Cooked

What makes a difference is the water. The salt extracts water from the eggs but adding water counters this. Seasoning before cooking they tend to come out dryish and fluffier without the water. Personally I add the seasonings before which is the way I’ve done it for over 60 years
