Southern-Style Spanish Tomato Sauce | Salsa de Tomate a la Andaluza
In this recipe, I will show you the secret ingredient to making the best tomato sauce ever. We´re talking a Southern-Style Spanish Tomato Sauce, known in Spain as Salsa de Tomate a la Andaluza. The secret ingredient? Sherry Vinegar. It gives the sauce an incredible depth of flavors and brings it all together.
This tomato sauce works perfect with just about any meal. Pour it over pasta for a delicious dinner, next to some grilled fish for a touch of the Mediterranean diet or even next to some fried eggs for an amazing breakfast. Either way, the flavors of this tomato sauce will blow you away.
To make this recipe, I used tomatoes off the vine, but you can use any tomatoes you like. If you can´t find fresh in-season tomatoes, you can also use canned tomatoes or canned tomato sauce to make this recipe. I have done it in the past, and the tomato sauce is still super flavorful.
TIPS & TRICKS to Make this Recipe: As stated above, the magical factor to this tomato sauce is the Sherry Vinegar. You can use other vinegars here, such as: White wine vinegar, red wine vinegar or even apple cider vinegar. But the Sherry vinegar, is what gives it that incredible depth of Spanish goodness.

Southern-Style Spanish Tomato Sauce | Salsa de Tomate a la Andaluza
Ingredients
- 12 tomatoes
- 1/2 green bell pepper
- 1/2 onion
- 2 tbsp extra virgin olive oil 30 ml
- 5 cloves garlic
- 1/2 tsp sweet smoked Spanish paprika 1.15 grams
- 1 tbsp sherry vinegar 15 ml
- 2 tbsp finely chopped parsley
- pinch sea salt
- dash black pepper
- dash granulated sugar
Instructions

Finely grate 12 fresh tomatoes into a large bowl, you want to end up with about 2 1/2 cups (560 grams) of grated tomato, then mix together and set aside

Finely chop 1/2 green bell pepper, finely dice 1/2 onion and roughly chop 5 cloves of garlic

Heat a large fry pan with a medium heat and add in 2 tbsp extra virgin olive oil

After 2 minutes, add in the onions, green bell pepper and garlic, mix together with the olive oil, after 5 minutes and the onion is translucent, add in 1/2 tsp sweet smoked paprika and 1 tbsp sherry vinegar, give it a quick mix, then add in the grated tomato, season with sea salt, black pepper and a kiss of granulated sugar, mix together and simmer

After 16 to 18 minutes and the tomato sauce has thickened up, add in 2 tbsp finely chopped parsley, turn off the heat, mix together and remove the pan from the stove top, serve warm or even chilled, enjoy!
