Southern-Style Spanish Tomato Sauce | Salsa de Tomate a la Andaluza

In this recipe, I will show you the secret ingredient to making the best tomato sauce ever. We´re talking a Southern-Style Spanish Tomato Sauce, known in Spain as Salsa de Tomate a la Andaluza. The secret ingredient? Sherry Vinegar. It gives the sauce an incredible depth of flavors and brings it all together.

Spanish Tomato Sauce
This tomato sauce works perfect with just about any meal. Pour it over pasta for a delicious dinner, next to some grilled fish for a touch of the Mediterranean diet or even next to some fried eggs for an amazing breakfast. Either way, the flavors of this tomato sauce will blow you away.

Spanish Tomato Sauce
To make this recipe, I used tomatoes off the vine, but you can use any tomatoes you like. If you can´t find fresh in-season tomatoes, you can also use canned tomatoes or canned tomato sauce to make this recipe. I have done it in the past, and the tomato sauce is still super flavorful.

TIPS & TRICKS to Make this Recipe: As stated above, the magical factor to this tomato sauce is the Sherry Vinegar. You can use other vinegars here, such as: White wine vinegar, red wine vinegar or even apple cider vinegar. But the Sherry vinegar, is what gives it that incredible depth of Spanish goodness.

This beats any tomato sauce ever! Instead of grating tomatoes, I made passata. Thank you for this wonderful sauce that can be used on so many things.

Could I use red wine vinegar instead of Sherry vinegar?

Excellent. I always feel that store-bought tomato sauce is too pasty. This is wonderful. Easy to make – I served it over no-yolk noodles. Another winner. Getting my Spanish-cooking game on!
