The AMAZING Chocolate Rice Cake | No Flour, No Butter, No Oil, Gluten Free
Are you ready for the most fascinating cake ever? This Spanish Chocolate Rice Cake is just that. We´re talking no flour, no butter and no oil, yet its got the most incredible flavor & texture. But the best part? It´s super easy to make, made with simple ingredients and perfect for any occasion.
To make this cake I used Spanish Bomba Rice (10% OFF Your Order with Code ¨ONAFORK¨), which is the one that´s used to make paella. You can use other types of rice, but this type of rice is what gives this cake that incredible texture.
I also used low-fat milk, but you can use full fat, non fat or even plant based milk. Either way, when cooking the milk with the rice, make sure to mix every 30 seconds or so, that way the milk doesn´t develop a film on it.
TIPS & TRICKS to Make this Recipe: It took me exactly 25 minutes to bake this cake. But every oven heats differently. So it might take you 5 minutes less or 5 minutes more. Either way, you want a slightly creamy texture in the interior.

Spanish Chocolate Rice Cake
Ingredients
- 5 cups low-fat milk 1200 ml
- 4 lemon peels
- 1 cup Spanish round rice 200 grams
- 3/4 cup granulated sugar 150 grams
- 3/4 cup unsweetened cocoa powder 75 grams
- 1/2 tsp cinnamon powder 1.5 grams
- 2 eggs
- dash powdered sugar
Instructions

Add the milk and lemon peels into a large fry pan, heat with a medium heat, once it comes to a light boil add in the rice, mix every 30 seconds

After 10 minutes remove the lemon peels, add the granulated sugar, cocoa powder and cinnamon powder, lower to a low-medium heat, mix until well mixed and then mix every 30 seconds

After a total cooking time of 25 minutes on the rice and you´ve ended up with a thick and creamy texture, turn off the heat and remove from the stove top

Meanwhile crack the eggs into a bowl and whisk together

Once the rice mixture has completely cooled off, add the whisked eggs, mix together until well mixed

Grease an 8-inch round baking pan with a little nonstick cooking spray, add the rice mixture, making sure it´s all in a flat layer

Add into a preheated oven, bake only option (bottom heat) 390 F / 200 C

After 25 minutes remove from the oven, let it rest for 10 minutes, then remove from the baking pan and sprinkle with powdered sugar, enjoy!

This looks delicious! The Nutritian Facts do not specify how may servings there are per cake or what size the servings are. I know these have to be approximate because this is a cake but I have to count carbohydrates very carefully for insulin dosing and would appreciate some sense of this. Thanks much!
