The ULTIMATE Tuna Sandwich | Spanish Empanada-Style Tuna Sandwich

This Spanish Empanada-Style Tuna Sandwich, known as Sandwich de Atun al Estilo Empanadilla, is what I consider to be, the Ultimate tuna sandwich. It´s packed with an insane amount of flavors, made with the simplest ingredients and done in just 30 minutes.

You can serve this tuna sandwich right out of the oven, or let it sit and serve at room temperature. Either way, serve it next to a cold Estrella Galicia, a typical Spanish beer from the region of Galicia, and you will have an instant trip to beautiful España.

For the bread I used typical white sandwich bread. But you can also use whole wheat, multigrain of even gluten free. Just make sure to lightly toast the bread before adding the tuna mixture. This ensures the sandwich won´t get soggy.

TIPS & TRICKS to Make this Recipe: I baked the sandwiches to get that empanada effect. But you can always lightly fry them in some olive oil for 2 minutes per side.

Spanish Empanada-Style Tuna Sandwich

Ingredients

  • 4 eggs
  • 4 cans tuna in olive oil 4 oz / 110 grams each
  • 1 small onion
  • 1 red bell pepper
  • 1 green bell pepper
  • 2 tomatoes
  • 1/2 tsp sweet smoked Spanish paprika 1.25 grams
  • 8 slices white sandwich bread
  • pinch sea salt
  • dash black pepper

Instructions

  1. Add 2 eggs into a sauce pan, fill with cold water, to about 1/2 inch (1.25 cm) above the eggs and heat with a high heat, once it comes to a boil, place a lid on the pan and turn off the heat, let the eggs sit for 11 to 12 minutes, then drain, peel and thinly slice

  2. Meanwhile, drain the canned tuna into a sieve with a bowl underneath, flake the tuna, finely chop the onion, finely chop the green and red bell peppers and finely grate the tomatoes

  3. Heat a large fry pan with a medium heat and add in 3 tbsp (45 ml) of the reserved olive oil from the canned tuna

  4. After 1 minute add in the chopped onion and bell peppers, mix with the olive oil, after 5 minutes and the vegetables are lightly sauteed, add in the paprika, give it a quick mix, then add in the grated tomatoes and season with sea salt & black pepper, mix together and simmer until the tomato has slightly thickened up, about 3 minutes, then turn off the heat, add in the drained tuna and mix together until well mixed

  5. Lightly toast the slices of bread, then add the tuna mixture on the bottom slice of each sandwich, top off with the sliced hard boiled eggs and place the top slice of bread over each sandwich, gently push down on each sandwich

  6. Transfer the sandwiches into a baking tray lined with parchment paper, brush some egg wash (2 eggs whisked and seasoned with salt & pepper) on both sides of each sandwich

  7. Add the baking tray into a preheated oven, bake + broil option (bottom + top heat), 220 C - 425 F

  8. After 10 minutes and the sandwiches are golden baked, remove from the oven, cut each one in half and serve, warm or at room temperature, enjoy!

    This looks delicious! Can’t wait to try this. I was in Spain in September visiting my family and I loved everything TUNA! Quality of the tuna is everything, of course, (so back in the U.S., I only use albacore to make tuna dishes).

    Quick question – do you sell Spain on a Fork “Aprons”? They would be a big seller, for sure, and I would buy several – for me and for gifts…..

    Cant wait to make this soon for me can i use mushrooms and spring onions and skip red and green bell peppers and tomatoes as am not a big fan of onions / red and green bell peppers and tomatoes i never had spanish empanda style tuna sandwich before perfect for my after office meals love your recipes as always brightens up my day everyday after work
