Spanish Onion & Cheese Fritters | Seriously GOOD 20 Minute Recipe
These Spanish Onion & Cheese Fritters, known as Buñuelos de Cebolla y Queso Manchego, are packed with flavors, seriously easy to make and all done in about 20 minutes. Serve them as a tapas appetizer, as they do in Spain, or even as a side dish next to a garlic potato omelette.
To make this recipe I used regular yellow onions. But you can use any type of onion you like. For the cheese, I used a Spanish Manchego that was aged for 6 months. But once again, you can use any cheese you like or whatever you have on hand.
To fry the fritters I used extra virgin olive oil. As it adds an incredible depth of flavors. You can use other oils here if you like, such as virgin olive oil, sunflower oil or even canola oil. Either way, make sure to fry the fritters on a medium heat and nothing higher. Otherwise, they will brown too quickly and not fully cook.
TIPS & TRICKS to Make this Recipe: You can make the batter ahead of time and add it to the fridge. It will hold for up to 3 days in an air-tight container. These fritters can be served piping hot or even at room temperature.

Spanish Onion & Cheese Fritters | Buñuelos de Cebolla y Queso Manchego
Ingredients
FOR THE FRITTERS
- 1/2 cup all purpose flour 60 grams
- 1 egg
- 1/2 cup beer 120 ml
- 2 onions
- 2 cloves garlic
- 2 tbsp chopped parsley 8 grams
- 1/2 tsp sweet smoked Spanish paprika 1.25 grams
- 1/2 tsp dried thyme .50 grams
- 1 cup grated Manchego cheese 120 grams
- pinch sea salt
- dash black pepper
FOR THE AIOLI
- 1/2 cup low fat mayonnaise 120 grams
- 1 clove garlic
- 1 tsp lemon juice 5 ml
- 1 tbsp extra virgin olive oil 15 ml
- 1 tbsp chopped parsley 4 grams
- pinch sea salt
- dash black pepper
EXTRAS
- 1/2 cup extra virgin olive oil 120 ml
Instructions

Add the flour into a large bowl and make a well in the middle, crack in the egg and whisk only the egg, then add in the beer and whisk everything together until you get a creamy batter

Finely chop the onions and add over the batter, finely grate the cloves of garlic over the onions, add in the parsley, paprika, dried thyme and season with sea salt & black pepper, mix together until well mixed, then add in the grated cheese and mix until you get a semi-thick batter

Heat a large fry pan with a medium heat and add in 1/2 cup (120 ml) extra virgin olive oil

Once the oil is nice and hot, add in spoonfuls of the batter into the pan, all in a single layer and evenly spaced out, cook in batches, go for 3 minutes per side or until golden fried all around, as you finish each batch, transfer into a plate with paper towels

To make the aioli, add the mayonnaise into a bowl, finely grate in the garlic, add in the lemon juice, extra virgin olive oil and parsley, season with sea salt & black pepper and whisk together until creamy

Add the aioli into a serving dish and decorate the fritters around it, enjoy!
