Spanish Style Squid Steaks with Spicy Garlic Sauce
Can you believe that it´s already mid-August? This summer is flying by! With that being said I had to release this recipe before summer escaped away. These Spanish Style Squid Steaks with Spicy Garlic Sauce have an incredible flavor and they scream out summer! Filled with simple yet extraordinary Spanish flavors and beyond easy to make.
In all honesty, in Spain we eat squid all-year long, but there is something about the summer heat that makes this dish extra-special. It´s light, can be paired next to a salad and always goes great with a glass of sangria, the perfect dish to enjoy al-fresco. I grilled my squid steaks on a non-stick frying pan, but you can always grill these on the bbq. You can usually find the tubes of squid I used in this recipe at Asian markets, even Amazon.com sells them now!
I have so many friends out in the States that love to eat squid, but will never attempt to cook it at home. There is something about squid that just scares the living life out of people. The main reason being that most people easily over-cook it, which ends up with a rubbery texture that is very unpleasant. The secret to perfectly cooking squid is very simple, don´t over-cook it!
With the tubes of squid that I used you want to cook them between 60-90 seconds per side, if you where to cut the tubes open I would say between 30-60 seconds per side. It may seem like they need to be cooking longer, but trust me, these are the key times. The thickness of the squid also matters, I would say a 1/4 inch steak to 45 seconds per side and a 1/2 inch steak to 75 seconds per side. Spanish Style Squid Steaks with Spicy Garlic Sauce
Ingredients
- 2 tubes of squid
- 3 tbsp extra virgin Spanish olive oil
- 1 spanish pepper
- 4 cloves of garlic
- 3 tbsp white wine
- pinch of sea salt
- freshly cracked black pepper
- 2 tbsp freshly chopped parsley
- fresh lemon wedges
Instructions

Thinly slice 4 cloves of garlic, de-seed a mild hot pepper and thinly slice it, for the 2 tubes of squid, if you´re using frozen tubes of squid, thaw them out, then rinse them under cold water and pat them completely dry, score each tube diagonally on both directions to end up with small diamond designs, do not cut all the way through, just shallow cuts, then rub some extra virgin Spanish olive oil all over and season them with sea salt and freshly cracked black pepper on both sides

Heat a non-stick frying pan with a medium-high heat, after 2 minutes add the tubes of squid scored side down, after 60-90 seconds flip them, after another 60-90 seconds remove the tubes of squid from the pan and set them aside on a plate

Using the same pan with the same heat add 2 tablespoons of extra virgin Spanish olive oil, then add the slices of garlic and slices of hot pepper and mix them with the oil, scrape anything that was left over from the squid, about 1 minute later add 3 tablespoons of white wine, a squeeze of fresh lemon juice (about 1 tsp), 1 tablespoon of freshly chopped parsley and season with sea salt and freshly cracked black pepper, about 2 minutes after adding the wine the sauce is done, drizzle it over the squid steaks and garnish the dish with some lemon wedges and freshly chopped parsley, enjoy!

16 . Jan . 2020I have always made a beurre blanc sauce for squid steaks. We were in Spain a couple of months ago and really enjoyed the food, especially the seafood. So, when I saw this recipe, I wanted to try it. It came out very well. Very delicious and pretty easy to make. Used roasted red peppers. I will definitely do this again. Would make a great dinner for entertaining.
