Spanish Tomato & Cheese Salad | IRRESISTIBLY Delicious & Easy to Make
This Spanish Tomato & Cheese Salad is what authentic Spanish flavors are all about. We´re talking layers of tomato and Manchego cheese topped off with a delicious sherry vinaigrette. But the best part? This salad is easy to make and comes together within minutes.
The Manchego Cheese I used (10% OFF Your First Order with Code ¨ONAFORK¨) is a young Manchego that´s been aged for 6 months. You can use other types of Manchego here or any other sheeps milk cheese. Though I don´t recommend one that´s been aged over 6 months. As it will over-power the salad.
For the tomatoes I used tomatoes off the vine. But once again, you can use any type of tomatoes you like. The secret? Try to use the ripest tomatoes you can find, as it´s what gives this salad that beautiful pop of goodness.
TIPS & TRICKS to Make this Recipe: You can serve this salad at room temperature or add into the fridge and serve chilled. It will hold for up to 3 to 4 days in the fridge.

Spanish Tomato & Cheese Salad
Ingredients
- 4 tomatoes
- 1/2 lbs Manchego cheese (Aged 6 months) .23 kg
- 2 tbsp extra virgin olive oil 30 ml
- 1/2 tbsp sherry vinegar 8 ml
- 1 clove garlic
- 1 tsp dried oregano 1 gram
- 1 tbsp finely chopped parsley 4 grams
- pinch sea salt
- dash black pepper
Instructions

Wash & pat dry the tomatoes, then cut each one into rounds that are 1/4 inch (.635 cm) thick

De-rind the cheese and cut into slices that are 1/8 inch (.3175) thick

Add the slices of tomato and cheese into a serving dish, going in order of tomato and then cheese and in a circular design

Add 2 tbsp extra virgin olive oil into a bowl, along with 1/2 tbsp sherry vinegar, finely grate 1 clove garlic, add 1 tsp dried oregano and 1 tbsp finely chopped fresh parsley, season with a kiss of sea salt & black pepper, whisk together until well mixed

Pour the dressing over the salad, serve at room temperature or add into the fridge and serve chilled, enjoy!
