Tortilla Española

Prep Time 5 minutes
Cook Time 35 minutes
Total Time 40 minutes

Ingredients

  • 3 Medium Yukon Gold Potatoes
  • 1 Brown Onion
  • 6 Fresh Eggs
  • 1/2 Cup Extra Virgin Olive Oil
  • Sea Salt

Instructions

  1. Peel the potatoes

  2. Rinse and pat dry potatoes

  3. Using a frying pan, turn your burner on to medium heat and add the 1/2 cup olive oil

  4. Cut potatoes into small thin pieces

  5. Add potatoes to frying pan

  6. Peel and dice the onion

  7. Add the onion to the potatoes on the frying pan and mix together and add salt to your liking

  8. beat the 6 eggs in a medium size bowl and add a generous pinch of salt to the eggs

  9. Once the potatoes and onions are cooked through add them to the bowl with the eggs and mix all together

  10. add the mixture back into the pan and cook on LOW heat for 3 minutes

  11. Using a plate that is bigger than the pan, place it over the pan and flip the tortilla over and slide the uncooked side to cook for another 3 minutes

  12. Slide the tortilla into a plate and let rest for at least 5 minutes

  13. Enjoy!

    This is one of my greatest discoveries. I made my first Spanish tortilla this past month and I think I’ve gone back and made it again like six times!

    What a fun and simple recipe. I made one for my neighbour and he loved it as well. It is delicious! It’s hard to believe that it is so cheap and easy to make!

    Thank you! I’ve looked all over for a version that actually tasted right. They all added extra stuff, or cooked the potatoes in water, or some other nonsense. This turned out perfect. It’s simple and depends for it’s flavor on quality ingredients. It’s just what I was looking for.
