VEGAN FIDEUÁ RECIPE | Spanish Noodle Paella

Fideuà is one of the most popular dishes inside of Spain. It´s very similar to a seafood paella, but made with noodles instead of rice. In this post, I will show you how to make a vegan fideuà. This dish is so easy to make and it´s so delicious, it will seriously blow you away.


Now, just because we´re not adding seafood to this fideuà, it does not mean it will lack in flavor. In-fact, what really flavors a fideuà are the spices & seasonings, like saffron and smoked paprika. Speaking of saffron, make sure to use high-quality saffron to make this dish. It makes all the difference in the world.


The noodles I used to make this fideuà, are just standard short thin noodles that are called “fideos“. Believe it or not, these are the authentic noodles to make a fideuà and they´re usually available at your local supermarket. Check in the pasta section, they should be labeled as “Fideo Mediano Pasta”.


TIPS & TRICKS to make this recipe: I used a paella pan to make this fideuà, however, you can use any large frying pan instead. I also used a very simple combination of veggies here, feel free to add whatever veggies you want. Just remember, the noodles are the star of the dish 🙂 .

VEGAN FIDEUÁ RECIPE | Spanish Noodle Paella

Ingredients

  • 1/4 cup extra virgin olive oil
  • 1/2 onion
  • 4 cloves garlic
  • 1 red bell pepper
  • 1/2 tsp sweet smoked paprika
  • 1/2 cup canned tomato sauce
  • 1/2 tsp saffron threads
  • 2 cups thin small noodles
  • 2 1/2 cups vegetable broth
  • sea salt
  • freshly cracked black pepper
  • 1 lemon
  • handful fresh parsley

Instructions

  1. Finely mince 4 cloves of garlic, finely dice 1/2 of an onion and roughly dice 1 red bell pepper

  2. Heat a paella pan with a medium-high heat and add in a 1/4 cup of extra virgin olive oil, after 1 minute add in the diced bell peppers and diced onion, mix continuously with the olive oil, after 4 to 5 minutes make a well in the pan, add in the minced garlic and mix with the olive oil, 20 seconds later add in 1/2 cup of canned tomato sauce, 1/2 tsp sweet smoked paprika and season with sea salt & black pepper, mix everything together until well combined and cook for 1 minute

  3. Next add in 2 cups of thin small noodles, pinch in 1/2 tsp of saffron threads and mix it all together until well combined, cook the noodles for 2 minutes, then add in 2 1/2 cups of vegetable broth, give it a gentle mix so everything is evenly divided, after this step don´t mix the noodles again as it distrups the texture of the dish, after 9 minutes and there is very little broth left, lower the fire to a low-medium heat and simmer for 3 minutes, after 3 minutes and there is virtually no broth left, remove the pan from the heat and cover with a dishcloth, after 5 minutes uncover the pan, garnish with slices of lemon and freshly chopped parsley, enjoy!
