Most people are turned off by salads, they seem dull and boring, and with so many restaurants serving up salads that just don´t cut it, this is very understandable. For me, eating salad is something I do everyday, I love all styles of salads, considering that they are somewhat healthy and deliver a BIG flavor. I am not a fan of ice berg lettuce with ranch dressing, as good as it sounds, it just doesn´t do it for me. I am always playing around with different types of ingredients when I am making salads, trying to find new flavors that work together, that ultimately deliver that wow-factor. This warm goat cheese salad is definitely one of those salads. It has a combination of simple yet tasty ingredients, a perfectly balanced flavor, and a big hit in my household. Warm Goat Cheese Salad
Ingredients
- 1 Head Romaine Lettuce
- 1 Small Red Onion
- 1 Tomato
- 2 Pitted Dates
- 1 Tbsp Toasted Sunflower Seeds
- 1 Tbsp Toasted Pumpkin Seeds
- 1 Thick Piece of Goat Cheese
- 3 Tbsp Extra Virgin Spanish Olive Oil
- 1 Egg
- Breadcrumbs
- Glazed Balsamic Vinegar
- Sea Salt
- Freshly Cracked Black Pepper
Instructions

Cut a head of romaine lettuce into small pieces, wash and pat dry and transfer to a shallow bowl

Cut a small red onion into thin slices, cut a tomato into thin half-circle slices and finely mince 2 pitted dates

Add the onions on top of the lettuce as well as the tomatoes, designing the tomatoes in a circular design

Next add 1 tablespoon of toasted sunflower seeds and 1 tablespoon of toasted pumpking seeds into the bowl

Beat 1 egg in a bowl and add about 1/4 cup of bread crumbs in another, dip a thick circular piece of goat cheese in the egg and then coat it well with the breadcrumbs

Heat a small non-stick frying pan with a medium heat and add a generous tablespoon of extra virgin Spanish olive oil to the pan

Once the oil get´s hot, add the breaded goat cheese, turn after about 20-25 seconds and cook the other side for another 20-25 seconds, then transfer on top of the salad

Now add the minced dates on top of the salad, drizzle some balsamic glaze on top of the salad, drizzle some extra virgin Spanish olive oil, season with sea salt and freshly cracked black pepper
