Spanish White Beans with Chunky Tomatoes & Paprika

Ingredients

  • 4 cloves garlic
  • 1/2 onion
  • 1 tsp sweet smoked paprika
  • 1/2 tsp ground cumin
  • 1 15 oz can diced tomatoes
  • 1 tbsp parsley flakes parsley
  • 1 28 oz jar white beans
  • pinch sea salt
  • pinch black pepper

Instructions

  1. Thinly slice 4 cloves of garlic, finely dice 1/2 of an onion, drain (1) 28 ounce jar or (2) 15 ounce cans of cooked white beans into a sieve and rinse under cold running water, make sure to rinse them well, shake off any excess water and set aside

  2. Heat a fry pan with a medium heat and add 2 tbsp of extra virgin olive oil, after 2 minutes add the slices of garlic and the diced onions and mix them around with the oil, after about 3 minutes and the onions are translucent add 1 tsp of sweet smoked paprlka, 1/2 tsp of cumin powder and mix it all together, then add one 15 ounce can of diced tomatoes, season everything with sea salt, freshly cracked black pepper and 1 tbsp of parsley flakes, mix together until well combined

  3. After simmering the sauce for 3 minutes add the white beans into the pan, season the beans with sea salt and freshly cracked black pepper, mix together until well combined and turn down the heat to a low, after simmering for 2 minutes remove the pan from the heat and serve at once, enjoy!
