Drain the cans of tuna into a fine sieve with a bowl underneath and gently flake the tuna
Transfer the tuna into a large bowl, along with the Greek yogurt, dijon mustard, chopped red onion, grated garlic, sliced kalamata olives, chopped parsey, lemon juice, paprika, and season with salt & pepper, mix together until well mixed
Heat a nonstick fry pan with a medium heat
In the meantime, add the tuna mixture over 3 slices of sandwich bread, then top off with a slice of cheese and another piece of bread, drizzle the top of each sandwich with a kiss of olive oil
Once the pan is nice and hot add in the sandwiches oil side down, gently push down on each sandwich so they are well compacted
After 3 to 4 minutes, drizzle the top of each sandwich with another kiss of olive oil, then gently flip each one, place a lid on the pan, not fully covering the pan, go for another 3 to 4 minutes or until the cheese is fully melted
Serve hot, enjoy!
