"Better than Deli" Tuna Salad Sandwich

Ingredients

  • 2 cans tuna in olive oil 4 oz / 110 grams each
  • 1/2 cup low fat mayonnaise 120 grams
  • 1 tbsp dijon mustard 14 grams
  • 1/3 cup chopped red onion 60 grams
  • 1 clove garlic (finely grated)
  • 1/4 cup chopped dill pickles 35 grams
  • 2 tbsp chopped parsley 8 grams
  • 2 tsp lemon juice 10 ml
  • 1 large tomato (thinly sliced)
  • handful shredded iceberg lettuce
  • sea salt & black pepper
  • 4 slices multi-grain sandwich bread

Instructions

  1. Drain the cans of tuna into a fine sieve with a bowl underneath, gently flake the tuna to remove any excess oil, then transfer into a large bowl, along with the mayonnaise, dijon mustard, red onion, garlic, dill pickels, parsley, lemon juice and season with sea salt & black pepper, mix together until well mixed

  2. Lightly toast the slices of sandwich bread

  3. Add the tuna salad over the slices of toast, top off with slices of tomato, shredded iceberg lettuce and another slice of toast, enjoy!
