Creamy GARLIC Butter Beans

Ingredients

  • 2 tbsp extra virgin olive oil 30 ml
  • 1 small onion
  • 8 cloves garlic
  • 1 tbsp all purpose flour 10 grams
  • 1 tsp sweet smoked Spanish paprika 2.50 grams
  • 1 tsp dried oregano 1 gram
  • 3/4 cup low fat milk 180 ml
  • 3/4 cup vegetable broth 180 ml
  • 2 cans butter beans 15.5 oz / 440 grams each
  • 2 tsp lemon juice 5 ml
  • 2 tbsp grated Manchego cheese 15 grams
  • sea salt & black pepper
  • chopped fresh parsley

Instructions

  1. Heat a large fry pan with a medium heat and add in the olive oil

  2. In the meantime, finely chop the onion, roughly chop the garlic and drain the cans of butter beans into a colander and rinse under water

  3. Add the chopped onion and garlic into the hot fry pan, mix continuously, after 3 to 4 minutes and the onion is translucent, add in the flour, mix continuously

  4. After 2 minutes add in the paprika and oregano, quickly mix together, then add in the milk and broth, continue to mix until you get a slightly creamy sauce, about 3 to 4 minutes, then add in the drained butter beans, lemon juice and season with sea salt & black pepper, mix together, then lower to a low-medium heat and simmer

  5. After 5 minutes, remove the pan from the heat, transfer into a large serving dish, top off with the grated cheese and chopped parsley, enjoy!
