Heat a large fry pan with a medium heat and add in the olive oil
In the meantime, cut the block of manchego cheese into slices that are 1 cm thick (a little over a 1/4 inch)
Add the flour into bowl, crack the eggs into a separate bowl, season with sea salt & black pepper and whisk together, add the panko breadcrumbs into a third separate bowl, season with the rosemary and a kiss of sea salt, mix together
Coat each slice of cheese, first in the flour, then into the egg wash, and finally into the breadcrumbs, making sure at each stage they are fully coated all around
Add the breaded slices of cheese into the hot fry pan, in a single layer and evenly spaced out, cook in batches to not overcrowd the pan, fry for 1 to 2 minutes per side or until golden and crispy, transfer into a dish with paper towels as you finish each batch
Add the slices of fried cheese into a serving dish, serve next to some strawberry jam for dipping and fresh parsley, serve at once, enjoy!
