Ingredients

  • 1/3 cup extra virgin olive oil 90 ml
  • 2/3 cup all purpose flour 80 grams
  • 1/3 cup cornstarch 40 grams
  • 1 tsp baking powder 4 grams
  • 2 tbsp granulated sugar 25 grams
  • 1/2 tsp cinnamon powder 1.25 grams
  • 1/4 tsp sea salt 1.50 grams
  • 2 eggs
  • 1/3 cup low fat milk 90 ml
  • 1 lemon
  • powdered sugar for dusting

Instructions

  1. Add the flour into a large bowl, along with the cornstarch, baking powder, granulated sugar, cinnamon powder, and salt, whisk together until well mixed

  2. Make a well in the middle, crack in the eggs, and whisk the eggs, then add in the milk, and whisk it all together until you get a thick batter with no lumps, then add in a kiss of lemon zest, and give it one final whisk

  3. Heat a large fry pan with a medium heat and add in the olive oil

  4. After a couple of minutes, start adding in spoonfuls of the batter, you want all the fritters in a single layer and evenly spaced, cook in batches, fry for 3 minutes per side or until golden and crispy, then transfer into a dish with paper towels, and top off with a kiss of powdered sugar while still hot

  5. Once all the fritters are done, transfer them into a serving dish and serve immediately, enjoy!
