
Add the flour and baking powder into a large bowl and whisk them together, then make a well in the middle, crack in the egg, and whisk the egg, and then add in the club soda and whisk everything together until you get a smooth batter
Add the chopped onion into the batter, along with the paprika, chopped chives, and season with salt & pepper, mix together until well mixed
Drain the cans of tuna into a fine sieve with a bowl underneath, gently flake the tuna, and add over the batter, along with the shredded cheese, and give the batter one final mix until it's well mixed together
Heat a large fry pan with a medium heat and add the olive oil
After a couple of minutes and the oil is hot, start adding in spoonfuls of the batter and gently pushing down on each one, you want all the fritters in a single layer and evenly spaced, so cook in batches to not overcrowd the pan, fry for 3 to 4 minutes per side or until golden and crispy, then transfer into a dish with paper towels
Add the Greek yogurt into a bowl, along with the grated garlic, hot smoked paprika, lemon juice, and olive oil, then season with salt & pepper and whisk together until you get a creamy sauce
Add the yogurt dip into a serving dish and decorate the fritters around it, top off with chopped chives, enjoy!
