Ingredients

FOR THE FRITTERS

  • 1/2 cup all purpose flour 60 grams
  • 1/2 tsp baking powder 2 grams
  • 1 large egg
  • 1/3 cup beer 90 ml
  • 1 can white beans (drained & rinsed) 15.5 oz / 440 grams
  • 2 cans tuna in olive oil (drained) 4 oz / 110 grams each
  • 1/4 cup chopped onion 40 grams
  • 2 cloves garlic (roughly chopped)
  • 2 tbsp chopped parsley 5 grams
  • 1/2 tsp sweet smoked Spanish paprika 1.25 grams
  • 1/4 tsp ground cumin 0.75 grams
  • sea salt & black pepper

FOR THE MAYO AIOLI

  • 1/2 cup low fat mayonnaise 120 grams
  • 1 clove garlic (finely grated)
  • 1 tsp hot smoked Spanish paprika 2.50 grams
  • 1 tsp lemon juice 5 ml
  • 1 tbsp extra virgin olive oil 15 ml
  • sea salt & black pepper

EXTRAS

  • 1/4 cup extra virgin olive oil 60 ml
  • chopped parsley for garnish

Instructions

  1. Add the flour and baking powder into a large bowl, whisk together, then make a well in the middle, crack in the egg and whisk the egg, then add in the beer and whisk everything together until you get a smooth batter

  2. Add the canned beans (drained & rinsed) into the batter, using a large wooden spoon break some of the beans apart, then add in the canned tuna (drained), chopped onion, chopped garlic, chopped parsley, paprika, cumin, and season with salt & pepper, mix together until well mixed

  3. Heat a large fry pan with a medium heat and add in the olive oil

  4. After a couple of minutes, add in spoonfuls of the batter, you want all the fritters in a single layer and evenly spaced out, cook in batches, fry the fritters for 3 minutes per side or until golden and crispy, then transfer into a dish with paper towels

  5. To make the mayo aioli, add the mayonnaise into a bowl, along with the grated garlic, hot smoked paprika, lemon juice, olive oil, and season with salt & pepper, whisk together

  6. Transfer the mayo aioli into a serving dish and decorate the fritters around it, enjoy!
