Spanish Broken Eggs - Huevos Rotos con Patatas

  • 2 Yukon Gold Potatoes
  • 2 Fresh Eggs
  • 1/2 Cup Extra Virgin Olive Oil
  • Smoked Paprika
  • Fresh Parsley
  • Sea Salt


  1. Cut the potatoes into 1/4 inch thick oval slices
  2. Cut each oval slice into french fry cut slices, about 4 fries per oval slice
  3. Grab a medium sized frying pan and heat the burner to a medium heat
  4. Add a 1/2 cup of extra virgin olive oil to the pan
  5. Once the oil gets hot, season with some sea salt and add the potatoes, stirring occasionally
  6. After cooking for about 5-7 minutes, season the potatoes with some sea salt and mix all together
  7. Once your potatoes are cooked all the way through, transfer to a plate with a paper towel
  8. Add the potatoes to a shallow bowl
  9. Using the same pan with the same oil, heat the the pan with a medium heat
  10. Once the oil gets hot fry the eggs, making sure not to over cook the yolk
  11. Transfer the eggs on top of the potatoes in the shallow bowl
  12. Dust with some smoked paprika
  13. Garnish with some fresh parsley
  14. Enjoy!
