Spanish Broken Eggs – Huevos Rotos con Patatas
Growing up eating potatoes and fried eggs is something I think most of us have in common, no big deal. However, I remember the first time I had Huevos Rotos con Patatas as an adult, it was breath taking. I was in the heart of Barcelona with my two brothers sistting in this beautiful terrace in the neighborhood of ¨El Born¨.
We ordered a couple of beers, some tapas and huevos rotos as our main course. As we drank, ate our tapas (we had fried calamari by the way!) and enjoyed our time, our appetite grew bigger and bigger. By the time our waiter brought out our main course, which was indeed the huevos rotos, we pretty much had a blank stare on our face.
As we ate, we realized this was one of the greatest things we had eaten in a long time. Sometimes less is more, and sometimes creating memories with great food makes a dish stand out above the rest.

Spanish Broken Eggs - Huevos Rotos con Patatas
Ingredients
- 2 Yukon Gold Potatoes
- 2 Fresh Eggs
- 1/2 Cup Extra Virgin Olive Oil
- Smoked Paprika
- Fresh Parsley
- Sea Salt
Instructions

Cut the potatoes into 1/4 inch thick oval slices

Cut each oval slice into french fry cut slices, about 4 fries per oval slice

Grab a medium sized frying pan and heat the burner to a medium heat

Add a 1/2 cup of extra virgin olive oil to the pan

Once the oil gets hot, season with some sea salt and add the potatoes, stirring occasionally

After cooking for about 5-7 minutes, season the potatoes with some sea salt and mix all together

Once your potatoes are cooked all the way through, transfer to a plate with a paper towel

Add the potatoes to a shallow bowl

Using the same pan with the same oil, heat the the pan with a medium heat

Once the oil gets hot fry the eggs, making sure not to over cook the yolk

Transfer the eggs on top of the potatoes in the shallow bowl

Dust with some smoked paprika

Garnish with some fresh parsley

I was intrigued by this dish and decided to give it a try.
I air fried frozen potatoes. I also cooked up three stripes of bacon and removed them from the pan and cut them into one inch pieces and placed the pieces on paper towels. Then I sautéed green onions and then added fresh mushrooms in the bacon fat and removed them to a plate with paper towels. I then added some olive oil to the bacon fat and prepared the eggs per your instructions.
I put the potatoes in a bowl and added the bacon, green onions and mushrooms and topped it off with shredded cheddar cheese and microwaved it for 45 seconds and topped it with the three sunny side up eggs.
Needless to say, my tastebuds went crazy as I devoured this delicious dish.

I’ve introduce my family to this, and it has become a favorite. We also add lomo to the plate. It was something I used to often make in the evenings when I lived in Almeria. Good comfort food.
