Spanish Mini Pizzas with Artichoke Hearts & Goat Cheese

Ingredients

  • 1 base premade pizza dough
  • 4 oz goat cheese
  • 15 oz can artichoke hearts
  • 16 black Spanish olives
  • 2 roasted red bell peppers
  • pinch hot smoked paprika
  • pinch sea salt
  • pinch black pepper
  • pinch parsley flakes
  • 1 tbsp extra virgin olive oil
  • handful fresh parsley

Instructions

  1. Drain a 15 oz can of artichoke hearts into a sieve and shake off any excess liquid, pat the artichoke hearts down with paper towels and cut each one in half, thinly slice about 16 black pitted Spanish olives and grab 2 jarred roasted red bell peppers and thinly slice

  2. Grab a premade pizza dough and roll it out, using a standard size cup push down on the dough and twist the cup to create the mini pizzas, you should end up with about 8 mini circular doughs, add a piece of parchment paper to a baking tray, sprinkle with some all-purpose flour and add the mini pizza doughs on top, lightly coat the doughs with the flour to give them that rustic look

  3. Evenly crumble about 4 ounces of goat cheese between the 8 pizza doughs, sprinkle a generous portion of hot smoked paprika on top of the cheese, add 2 artichoke hearts to each pizza, some sliced black olives and some pieces of the roasted red bell peppers, season with sea salt, black pepper and dried parsley flakes

  4. Add the mini pizzas to a preheated oven, bake + broil option, 210 C -410 F, after 13-15 minutes take the pizzas out of the oven and transfer to a serving dish, add a kiss of extra virgin olive oil to each pizza and sprinkle with some freshly chopped parsley, enjoy!
